  • Hi Everyone. Today’s recipe is Tourtiere Pie
    Tourtière is a French Canadian meat pie dish originating from the province of Quebec, usually made with minced pork, veal or beef and potatoes. Wild game is sometimes used.
    It is a traditional part of the Christmas réveillon and New Year's Eve meal in Quebec. It is also popular in New Brunswick.
    Tourtiere Pie recipe
    2 pounds of ground beef and pork ( or a pound of each)
    2 bay leaves
    1 tsp garlic powder
    1/2 tsp of pepper
    1/2 tsp allspice
    1/2 cup finely chopped celery
    2 splashes of Worcestershire sauce
    1 medium onion chopped
    2 large potatoes grated
    2 cups of beef broth or 2 cups of water and 2 beef bullion cubes
    A double pie crust
    1 egg yold
    1 tbs water
    Fry meat, add spices, onion, celery and Worcestershire sauce. When meat is cooked add potatoes and beef broth, cook until potatoes are cooked and mixture renders off its liquid.
    Remove bay leaves. Remove from heat and let cool for 40 minutes or until room temperature.
    Pour mixture into pie shell with bottom crust, top with the other pie crust and crimp the edges. Make a few cuts in the crust to vent and egg wash with egg yolk and 1 tbs of water mixed together.
    Bake in a 350 oven for 45 minutes or until the pie is done.

    Tourtiere is a canadian Christmas tradition pie which is so versatile and is made in so many different ways most following thei mother's, grandmother's and great grandmother's recipes but which ever way and ingredients you use it is to each individual their's is the best. Thank you for sharing and this may inspire people from other cultures to give it a try. Blessings

    I've never made a meat pie, but this looks delicious. Adding pie crust to my Wal-Mart order

    Some places have taken to calling beef and pork mix "BORK"!
    Someone posted this week about bay leaves seeming like a scam and that nobody ever said,"This needs a bay leaf". I told him that he was certainly wrong!

    We usually just make mashed potatoes, use some for the tourtierre and the rest gets the milk/butter/sour cream for that nights dinner. :)
