Corn Capsicum Sabji | Jain Corn Gravy for Chaturmas | Paryushan Ke Liye Special Monsoon Sabji

  • Chaturmas is a 4 month period when Jains do not consume vegetables that grow below the ground or "kandamul". Usually, most avoid having potatoes, ginger, onions, garlic, beetroot, carrots. This quarantine Chaturmas, we have not restrained ourselves from having ginger as they are great immunity boosters and we all need it. For one such meal, we prepared this super easy corn capsicum tomato curry that is Jain and yet super tasty!
    Ingredients:
    2 tbsp oil
    1 tsp cumin seeds / jeera
    1 cup corn
    1 cup diced capsicum
    2 cups grated tomatoes
    ½ tsp kashmiri red chilli powder / lal mirch powder
    ¼ tsp turmeric / haldi
    ½ tsp garam masala powder
    1 tsp salt
    2 tbsp coriander leaves, finely chopped
    Method:
    1. In a pan, take some oil and add cumin seeds to it. Allow it to splutter. Once done, add corn and capsicum to this and allow it to cook for about 5 mins till capscium turn slightly translucent.
    2. Next add grated tomatoes and cook for another 5 mins. Add all the dry spices and mix it well. Add salt to taste. Add a splash of water for it to cook if your gravy is too dry. You can also cook it covered with a lid.
    3. Once done, garnish it with some coriander leaves and have it hot with some phulkas.

    We can't use leelotri/vegetables like capsicum & corn during paryushan. It can be mentioned as Chaumasa not paryushan. Please edit the content.Thank you

      Some people just avoid jaminkand during Paryushan. I agree with Leelotri part but not everyone follows :)

    कैप्सीकम् और कोर्न दोनो ही पर्युषण मे नही खा सकते, दोनो ही ग्रीन वेजिटेबलस है ।

      You are right! We accept the mistake. You can make it for Chaturmas only when we eat Lilotri

      Powder right? Anything dried and powdered is fine as water holds bacteria and micro organisms.

      Nahi, raw corn ko wash karke hi use kijiye. Thoda jyada time lagega pakne mein par accha rahega.

    It is not jain food bcoz I am follower of satvic movement so we can't use any type of red chilli in sabji
