Buckwheat Chapati Flatbread Gluten Free IBS | Grand Recipe

  • Full written recipe for Buckwheat Chapati
    Ingredients:
    500g buckwheat flour
    300ml water
    Process:
    Add 500g of buckwheat flour into a bowl.
    Gradually add in 300ml of water and knead dough until firm.
    Pre-heat a tawa.
    Grab some dough and shape into a ball.
    Press and flip in some buckwheat flour.
    Roll.
    Place on the tawa and cook each side for about a minute.
    Then heat each side over the flame until golden brown patches appear.
    Chapati is ready. Enjoy.

    All great,just one important detail, it's better not to burn the bread cause those little burnt spots are a substance called acrilamide,and that is very carcinogenic

      I agree with the comments that cooking food in such a manner may cause cancer. We should be sensitive. Cancer is a life and death disease. Please be sensitive to this and teach the rightful things. However, I think you did a good VDO. 😢😢😢

    This does not look the usual buckwheat flour- organic or not. It looks like the typical wholewheat atta flour which can be easily kneaded into a ball like in this video. Since it has gluten it is quite sticky & you can see it cling to the sides of the bowl.Buckwheat flour is more grainy & lacks gluten - it does not smoothly come together like this dough.

      The buckwheat flour I buy is this color and cooks like this. It is organic hulled buckwheat. There seem to be different varieties or colors and how they are milled.

    I agree it is not pure buckwheat flour.. The color is different texture is different and it is difficult to roll buckwheat flour by dusting it only once in flour

      We purchase organic hulled buckwheat flour. The dark fllour that others use is unhulled.

      Yes it should still work, although the texture may not be the same. Worth a try.

    I kneaded it and it was firm, but when I rolled it out I couldn't lift it and it became crumbly. What did I do wrong?

      Hi,
      Sorry to hear that. This usually happens when it requires more kneading. So simply knead it for longer until you reach the stage where it is perfect and does not crumble. It can take a few attempts to master it.

      Hi, do you mean the black circular object which the bread is on? That is called a tawa or griddle.

      You should be able to make about 5 big chapatis or 10 small ones. So it depends on the amount of dough you take and roll.

      We get from a local flour supplier. But you can search for hulled buckwheat flour. The hulled groats have the outer shell removed.

    My flour just wouldn’t come together and the roti just fell apart so I had to add wheat flour but it was very difficult to make them. They came out thick and dark.

      Hi Rinku,
      Sorry to hear that. We use organic whole buckwheat flour. Kneading buckwheat flour is trickier than wheat flour at first. As it doesn't have gluten, it can take some practice to get used to. You will get there after a few attempts. Try reducing or increasing the amount of water/flour until you get it perfect. Overtime you will find what works best for you.

      Hi. You can search for Organic Stoneground Wholemeal Buckwheat Flour online. Buckwheat is naturally gluten free. It is known as Kuttu in Urdu/Hindi. You can also try Sorghum flour also known as Jowar in Urdu/Hindi which is also gluten free.

      This can be served with a variety of dishes, from vegetable to meat curries, etc. Anything you would serve with the usual wheat flatbreads, you can also do with Buckwheat 😀

      You can brush some butter/oil on them, and they should stay soft.

      It should work fine on electric ovens as well, just may not have the same texture as flame. But heat alone should cook it fine also.

      Yes the process is the same, just the ratio of flour to water will be different as wheat is a gluten flour. It is easier to cook than buckwheat.

      Add 2 cups of wheat flour to a bowl
      and gradually add about 1 cup of water while kneading. Don't add all the water at once. Just keep adding water as needed while mixing until the dough forms and knead until it is smooth. @@incorectulpolitic

      There are quite a few flours which are good for weight loss and health such as Almond flour, Pearl Millet (bajra), Ragi, Sorghum, Buckwheat.

      Flour is 500g, which is around 2 cups. Just normal temperature flour that sits out.

    This wheat seems to be normal flour not Buckwheat which is black in colour. In India we call it kuttu.

      This is the color of Buckwheat flour what we get. There seem to be different colours. But yes in India it is darker.

    I don't want to sound rude but this chapati is not good in summer. It's too hard to chew even in room temperature. However good to eat in winter.

    The whole thing is sticky. , Lots of flour had to be added to the amount😖 that you suggested. It was really messy for me.

      Sorry to hear that. Seems to work differently for some, maybe due to the Buckhwheat flour variety, temperature, etc. Keep trying and you will eventually find the correct flour to water ratio that works best for you 👍
