Kevin, I changed the saddles in the bridge of the first guitar I ever modified. I did all kinds of work on that guitar, without making it look QUITE as rough as Eddie Van Halen's Frankenstein. One thing I did was trade the stock, cheapo Strat style 6-screw vibrato for a unit with a brass sustain block and everything else made of steel. That rocked, but I got curious about a bridge I saw in a guitar I WASN'T going to buy. The bridge was like the one I'd installed, but with brass saddles. Curiosity got me good, so I tried to find similar saddles online. I didn't find BENT brass saddles like those on that one bridge, but found brass BLOCK-style saddles. All that brass warmed the tone of that guitar so much that I decided that I wouldn't change the pickups. I didn't want even a BETTER sound -- I wanted THAT sound! I put brass saddles on the bridge of one of my Donner guitars to make it different from the other one. There, the difference is much harder to hear, but noticeable! Of course, little of those differences will be audible if you're using too much distortion.
Its just a fun thing to test your ear too but if you like all the pieces on your guitar you will play with more confidence but i to like the brass saddle and kept them on it and it was definitely a difference
