LIDIA MILAGROS HUARINGA VARGAS blind baking is just baking the crust to the point of firmness (almost done) and once the filling is put in the baking pan the crust will finish baking. His crust looked under baked to me.

The crust was still cooked through and very delicious even without having blind baked the crust first. That being said, I did increase the bake time until I saw that the crust was golden.

You can see from the comments that it is a problem. Your written recipe is wrong and misleading. To figure this out if you are a novice baker, you have to search for the hidden information which are added as an aside in the notes. Just wrong!

Bake crust after refrigeration for 10mins (blind baking)+10mins after brushing with egg..180 Celsius Then bake with mango filling for 10mins @200 then 25mins @160...so total 10+10+10+25=55mins..then 2hrs in fridge before serving

Nothing really happens. I didn’t have lemon juice and the tart baked just fine without it. The lemon juice is mostly there to brighten up the mango flavor, so it’s not like it’s a super important ingredient.

What if we don't add lemon zest and lemon juice ??
I guess it adds a touch of acidity and prevents some oxidisation of the mango puree.
