The menu and post content would remain no matter the theme you use. If you mean you imported demo content then you would need to manually remove it for the content to be removed.
Hi, I want to change theme of my wordpress website and design it from scratch, is the process to do that I deactivate my current theme and delete all the pages, activate new themes and start working on it?
You do not need to remove your content to use a new theme, you would select a new theme to activate, the old theme will deactivate and your content will remain but will need to be styled with the new theme's settings.
It is not completely deleting the default theme elements because when I'm using element themes, I can still see the existing WordPress theme's header and footer. How to delete those remaining header and footer from the deleted theme?
Unless you are using a theme that is a child theme of your current theme the header and footer files should be different between themes. If you mean the content in the header then some of that can be pulled from your Settings>General or Appearance>Menus sections
You would use FTP we show how to use this in our guide below: www.wpbeginner.com/beginners-guide/how-to-use-ftp-to-upload-files-to-wordpress-for-beginners/
That would depend on your specific hosting provider. If you check with your host they should let you know if they have a file manager and how to access it.

Appearance > Themes > click into theme > bottom right, click delete! you really don't need to sit through almost 5 minutes of this video for that!
That is one of the methods but we go into more methods in this guide and some users prefer we go over every step which we try to do :)
I clicked Appearance > Themes > Clicked onto theme > bottom right > No delete option.... What now Shane?
