As someone who helped run a couple restaurants with my dad many years ago, I can tell you that Alex is worth his weight in gold to an owner - not only is he darn good at what he does (he's wired with that blessing of organization skills on the fly!) but he also gives a damn about it, too. This might be a big ask: Could you explain how you're cracking eggs with one hand? I've watched several other videos on it, and I have not seen anyone do it as consistently or as quickly as you do. And I definitely haven't managed to make it work for me.
I absolutely love your videos. The only thing I think you should’ve done differently this time is give the scrambled eggs that was left over to the person you gave the other half of portion to. Just my opinion .😊
If Alex reads out the ticket and you watch this enough, you'll anticipate when he drops the frier food, throws the bread/tortillas on the grill, keeps the supply of hash browns available and spaces out prepping the eggs on multiple orders at once.
