I made a half recipe for 12 pitas. I needed to add a bit extra water because my dough seemed so dry. I kneaded by hand and it was quick and easy. Rolling them out was no problem. I cooked mine on the stove like tortillas because my oven was occupied and it seemed to work great. They are so pliable and soft, really professional. Though not a pocket, just a perfect flatbread.
My daughter loves Pita bread! I guess this is something I will need to learn but I'm still learning to make bread. Thanks for the recipes Felicia. You're the best teacher ever! Bet you didn't know you had a 70 year old student. lol

A coupe years ago I made pita (not freshly milled). I remember saying I’d never do it again 😂 well today made a liar of me. They just wouldn’t puff til I increased the oven to 500. Then I started getting pockets :) delicious!!! Thanks for the vid!

We'll be using lamb for our gyros, since we have a sheep farm. These will be the first lambs we've processed ourselves! So excited to have our own meat source! I've been working on my own pita recipe and techniques for a fatter pita pocket (Israeli style) for falafel and I'm loving how they are coming out, but I am still working on the work flow. That whole grain tortilla is so hard right? We want it to be perfect too. I may be onto something with it and I hope to share it when I get there.

When I make pizza I just use my simple yeast loaf recipe! I just use what I need for whatever size pizza I am making. Simple and I don't have to learn another recipe. However, I would like to experiment with other doughs and when I do, I will do a video!

Ah I forgot to address that. I have a good tortilla press but I find it shrinks back up too fast when pressed. That’s why I roll it by hand. When I did it in the tortilla press I couldn’t get it thin enough.

Hi Felicia and fans, if you are looking to make pita with pockets, the instructional video on healthykitchens channel is perfect. She broke down the important parts and got to the bottom of how and why it works and uses the bosch and freshly ground wheat. I'm finally able to make consistently successful pockets.
I could not get my to consistently puff either until I started using a cast iron griddle. You put it in the oven while preheating and then place your pitas on it instead of a cookie sheet. Now I rarely have any that don’t puff up!
