  • Prahok Ktis ប្រហុកខ្ទិះ is a creamy Cambodian dip made of herbs, minced meat, and prahok. Prahok is fermented fish paste and is the heart and soul of Cambodian cuisine. It gives dishes a complex savory and umami flavor (similar to role of anchovies and cheese in foods). This dip is incredibly flavorful and goes great with crunchy vegetables and freshly steamed jasmine rice.

    INGREDIENTS
    Guajillo Peppers - 3 peppers
    Lemongrass - 3 stalks
    Galangal - 1.5 tbsp
    Kaffir Lime Leaves - 8 leaves
    Garlic - 4 cloves
    Turmeric - 1.5 tsp
    Pea Eggplant - 2 cups
    Red & Green Chilis - 10+ chilis
    Vegetable Oil - 4.5 tbsp (see video for how to prep)
    Dried Chilis - 10+ chilis
    Ground Pork - 2.5 cups
    Prahok - 2 to 3 tbsp
    Hot Water - 3/4 cup
    Sugar - 2 tbsp
    Chicken Soup Base Powder Mix (Bouillon Powder) - 1/2 tbsp
    Fish Sauce - 1 tbsp
    Coconut Milk - 1 cup
    Water (mixed in mortar used to mash guajillo peppers, regular water is fine too) - 1/4 cup
    Additional Water - 1/2 cup (see video for tips)
    Adjust flavors to your liking!

    I am also Cambodian American. Your channels allow me to be able to recreate my grandmother’s cooking a few years before the Cambodia fell under Pol Pot Regime. Because of the land of opportunities, I had a chance to enjoy food from fine European Restaurants on my international assignments,. Back home, didn’t feel cooking after work. Now, I am retired, I have looking for recipes that my grandmother used to cook. Your channels have been a bless in a sky. Thank you so much!

      Yes, there a few suppliers that sell them on Etsy.com seasonally. You can leave them out or use regular Thai eggplants. If you use the Thai eggplants, add then at the end. The thing about pea eggplants is they still remain a bit snappy and crunchy after cooking it like this. Thank you so much for watching!

    This looks so spicy and good. Since you are using prahok juice for this and not the prahok meat itself, do you think I use Pantai brand padaek as a sub or would the taste be entirely altered?

      Pantai Padaek has a different flavor from this kind of chunky snakehead fish Padaek but it's going to serve the same purpose, that funky umami taste. If you can't get this brand, the Pantai brand will work but it will taste a bit different. I'm sure still good!

      It's usually eaten as a snack but it can also be a side with rice for meals like lunch or dinner.

      You can adjust the amount of fish sauce you use and maybe mix in a bit of shrimp paste for more complex umami flavor. Prahok is definitely a main flavor for this dip though. Please keep in mind the flavor will be much different. Thank you

    Great video but your recipe has errors, you have to know the modern history of Cambodia to know why even those born there are wrong too 😓.
    The cause is the dictatorship under《Khmer Republic》ruled by Lon Nol (put in place by the United States and South Korea), which had closed 80% of the country's schools, except 3 Taiwanese schools and other pro-USA schools in Phnom Penh, forcing majority of children to be soldiers + the genocide by 《Democratic Kampuchea》which never called itself 《Khmer Rouge》, occurring after the previous massacre and chaos.
    1} The Khmers never use chicken soup powder in any of our dishes (it's imported from Thailand and the Philippines since the 2000's) ; it's just some people in the diaspora who don't have culinary knowledge, (but their videos have influenced Cambodian vloggers and their viewers).
    2} This dish has only prahok as salt, no fish sauce.
    3} The dried smoked fish we call 《trey chh'a ត្រីឆ្អើ》is missing.
    4} Palm sugar is traditionally used, which can be replaced by cane, coconut or beet sugar if you live abroad.
    Now many Cambodians use imported beet because it is seen as a luxury product, but it hurts the local economy.
    5} There is no oil in prahok ktis, kroeung and chili paste should be flavored in the fat part of coconut milk.
    6} You have to grill the pea eggplant at the beginning in a pan, it will remain crunchy in addition to releasing flavor.
    7} You must either add brown tamarind paste to the simmering dish / or sprinkle lime juice in your bowl individually.

      Are you of Lao ethnicity from Isan in Thailand? Your food cooked a lot in this region and your profile picture make me think so. The Lao are light-skinned like the Han, and are more open to native Khmers from Surin, Buriram, Sisaket provinces + Cambodia.
      The Siamese are more tanned and many don't like us. The Mons & Kuy are brown too but nice 😛.
