    INGREDIENTS:
    1 Quart milk
    1 cup sugar
    ¼ Tbsp Vanilla
    ¼ tsp baking soda
    Or
    1 Gallon milk
    4 cups sugar
    1 Tbsp Vanilla
    1 tsp baking soda
    For salted caramel, add ¼ to ½ tsp salt per ½ pint jar.
    For chocolate caramel, add 1 Tbsp cocoa per ½ pint jar.
    CANNING DETAILS:
    ¼ in headspace
    Water bath for 20 minutes for ½ pints

    For those who don't want the sugar, allulose works just as well. Also, add your vanilla at the end after you take it off the stove

    HOLY WOW! My mouth is watering! Just what I needed was your video this morning! Had a bad storm yesterday that knocked out the power to LOTS of us. Today is supposed to be the first of at least 3 days of 100°+ weather. Sooo... Hopefully in the next few hours it'll come back on & I can get back to business. Currently, it's mostly me & God keeping an eye on my freezers. But you just let me at this whole caramel sauce business!! I don't have access to goats milk, but you said regular milk would work too. So you've helped me make room for those dang July chickens! I have gallons & gallons of milk to be canned in one freezer & I can't see ANY reason NOT to turn a bunch of it into Miss Chrystals caramel "sin in a jar". Lots of chocolate ones!! No, I shouldn't presume to NAME YOUR goodies without permission, but this is what I'm going to label it in MY pantry!! Mr Reeve will be appropriately recognized for his caramel coffee concoction as well. Stand by & I'll update you guys once the deed is done! 😈😉🥰🤣

      Hello Miss Sandi! Regular milk will work. And it bring frozen first shouldn’t be an issue. My first batch I used frozen milk and it was perfect. I often end my videos with “stay warm out there.” But for you I make the exception, Stay cool out there! 100°, I’m sure I’d die.

The power came back on while I was in town, drinking an iced tea in an air-conditioned restaurant, trying to cool my spoiled butt off a bit. But... God is good, He puts up with whiners like me & still listens to our prayers. (Even between whiney fits) Hopefully, everybody that needed it worse than me got their power back first. I'm grateful enough for all of us & now... working on a plan B for these "alleged" rolling blackouts they say are coming. I've also realized, on VERY short notice... that I'm not just up against the wall for my chickens, but for times like the last 24 hrs and everything else that could be wasted. Soooo... here we go!

      I had to look at your temps today &, of course... had to whine to Roy. His response was ad expected... yeah high 60's NOW... Winter comes...-60's!! Then what?? Mumbling something about bonfire not being as much fun all by myself or something along those lines!!🤣🤣🤣 I think he might have offered to stick me in a freezer when I yelled BRING ON THE SNOW!!!       @@sandijammes7761 Keep working on him. He might think about moving here after a few hours in the house without power and air conditioning. One summer it hit 90° here and our camper was the only thing that had air conditioning and was big enough for us to stay in with the friends we had over. Of course we had NEVER used it before, we weren’t even sure what that big box on top of the camper was for. But we figured it out and lived to tell the tale. Ha! Rolling black outs sound horrible! When we were kids the power would go out for a few hours at a time . We thought it was so cool when that happened. We got out candies and board games. It was like camping at our kitchen table. You need a generator for your air conditioner. Also, a freezer only takes a tiny bit of power (like less than 200 watts) you could run that baby off 1 solar panel!

      @@FlatTireFarmHomesteadingAlaska unfortunately, you used the word camper. We just spent the last almost 2 yrs living in a very used camper, after he had a total loss house fire. I don't think a reminder like that is gonna help. 😑 And yeah... you're probably right about the freezer only using that much power, but, multiply that by 2 large, 1- 10.4 & 2- 7.0 cubic ft freezers. 🤪 The goal is to get us down to the 3 smaller ones at some point, & I'll get us there, but only because one of the bigger ones is 90% baking stuff that I moved here from up north, but that's a lot of vacuum sealing to do while my canners are going!

      Hello! I’d be interested to see how it turns out with shelf stable milk. We have done shelf stable chocolate milk that is definitely past its “we gotta use it now” stage. I bet it’ll turn out great!

      @@marlenereimchen9141 Yay for baby cows!!! We are really fortunate with our goats milk. It’s pretty good. No goat armpit flavor. Ha! I think it’s a combination of the breed and the fact that we keep the buck away from the ladies and he wears a buck apron so he’s not peeing all over himself spreading his stink. I have a theory that all the hormone and pee just kinda gets everywhere including the milk. Happy milking!

      @@FlatTireFarmHomesteadingAlaska yeah my buck is always with the nannies and his kids. I raise meat goats so they are mostly Boar with some Nubian. So their milk tastes like armpits 🤣 Not too sure what that tastes like but... they are not trained to be milked. I just let the kids drink until it's time for the auction.

      Hey Miss Mindy! I think a crock pot will work, just keep it on low. If you find that it starts sticking to the bottom, you may need to set it on warn. I think I’d warn the milk up first before putting it in the crockpot. It seems to stick at the beginning while the milk is warming up for some reason. Then when It’s warm, I can turn up the heat.

      I can imagine. I made the lemon curd and so far my favorite way to eat it is on a spoon! I bet the caramel sauce will be the same way. I have a horrible sweet tooth! Today I went to the store and my fix of Hershey chocolate bars have gone up almost 100% in the last year! Being able to make your own sweets is a huge saving and so much healthier!

    How long is it good for canned and on a shelf before opening it? After opening does it need to be in the refrigerator

      Hey friend, great question. This is not an approved canning method because it contains milk. However, in my pantry, it’s good for about a year. In the refrigerator, it will be good for a very, very, very long time. Ha!

      Hey friend, since this is not an approved method there’s not an industry standard for shelf stable time. However, it stays great on my pantry shelves for a year. 😊

    Would this consistency work for dipping apples for Carmel apples?

      Definitely. And the great thing about this recipe is that you just cook it down to the consistency that you want. The consistency in our jars once it’s cooled is a little bit like the hot fudge you by the grocery store. And then when you warm it up It’s nice and fluid. You could definitely dip apples in it when it’s cold. It’s smooth and soft enough. Thanks for watching friend and thanks for your comment and question. 😊

      On second look, I might’ve missed. read your question. The consistency would not be good for making the caramel apples that come on a stick. The caramel doesn’t really get hard enough. I don’t think. It’s definitely good for dipping slices of apples in. But if you wanted a thicker caramel at room temperature, you would just cook the caramel down longer during the cooking process and wait till you get to the right consistency. It’s totally worth a shot although I’ve never tried it for coating caramel apples. 😊

      Hey friend! I’ve had it on my shelf for a year now and its still awesome. Since it’s not an approved method there’s not an official timeframe. But in my pantry, it’s good for at least a year. 😊Hope that helps.

      @@texas9078 yay!!! we dip apples in it, poured over ice cream, and Mr. Reeve spoons it into his coffee as a sweetener. I bet it would be a really good as part of the filling for cinnamon rolls. Yum!

    How long is it good for not canned in the fridge?

      Hey friend, it’s good for at least three weeks in the fridge if you’re not going to can it. If you wanted it to last a lot longer you could can in small portions like half pint jars. But rather than storing it on the shelf, just store it in the fridge. If you did that the unopened sealed jars would last at least six months until you opened them. Hope that helps.       Hello! Good question. Canning dairy is not considered safe for canning by the National Center for Home Food Preservation. This is a rule I generally follow. However, this is one of the few cases I make an exception. I think if it more as a jam or syrup. I am comfortable putting it on my pantry shelves. It will stay just as lovely in the refrigerator sealed for a long time. Thanks for you watching. 😊

    How long of a water bath would you suggest for pint jars?

      Good question. The sauce is super hot when you put it in the jar because it has so much sugar in it. It’s mostly like molten lava. Ha! So I would just increase the time by 5 minutes. 😊

      So far. I’ve had mine for 9 months on the shelf in the pantry at about 55 degrees and it’s still delicious. It’s not an approved canning method, so you might feel more comfortable having it in the fridge. 😊

      @@FlatTireFarmHomesteadingAlaska we got it done. 6 jars of chocolate and 6 jars of plain. My husband doesn't like goat milk but he likes our cajeta lol. 😁 He said if that and soap were they only purpose they served it would be enough lol.
