  • Recipe: adventuresineve... Have you ever eaten a cookie made of potato? Me neither! So today we are adventuring with Scottish Macaroons whose base is mashed potato! With just four ingredients (mashed potato, powdered sugar, unsweetened coconut, and dark chocolate) and naturally #glutenfree these cookies look pretty simple and claim to be amazing. Let's see if we agree!

    yum. Have you ever had potato candy? You make that dough with the potato and sugar that you made for this but a little more sugar to make it much less sticky. As you noticed the sugar just turns the potato to slime and so you have to balance that with the sugar. Then you use a rolling pin to roll it out like a pizza dough and then add filling I like to use simple peanut butter. then you roll it up and cut it into slices. Kinda like a pumpkin roll but Now that is a very vague recipe because I made this before internet days and I was a teenager and I just tried to make them based on what I had been told but it is a very simple no bake candy and it is very yummy. You can also dip them in chocolate but you just have to have a firmer dough.

    Try freezing overnight before coating in melted chocolate anf you've got to dunk them in chocolate very fast with your fingertips, then coat in melted chocolate and coconut before the chocolate sets up. The science behind these macaroons, is that the icing sugar crystallises over time and they become structurally more stable and crumbly. I remember having these with some mint flavouring. You could add lemon, vanilla, or grated tangerine zest. I'm from Glasgow in Scotland, and you've made these great.
    I watched a recipe for US Southern Potatoe Peanut Butter pinwheels, that also uses mashed potatoes❤

    My recipe used ratio of 1 cup warm mashed potato to about 2 pounds powdered sugar (plus other ingredients) and added to a stiff dough that is then kneaded, covered with damp cloth and chilled until a small spoonful can be rolled into a small ball.

    Farm Journal country Cookbook had a recipe for Pioneer Potato Candy Thai is similar. It was great to make with younger kids, but very sweet. A lot like fondant and could be dipped into or rolled in many things.

    Here’s a thought…could you roll them into balls, and use forks to dip them like you would do with truffles? Or thin out the chocolate with a touch of coconut oil?

    Hey, good vid.. Leave them in the freezer for 1hr 20. Make them more a bar shape, easier to handle, make them a thicker mixture bar shaped. Sit them on a wire tray to cool.
    Needing another recipe, try Scottish tablet 😊

    Could you use instant potato or does it have to be actual potato? Thanks for your videos, you always put a smile on my face.

      You know, I think you could use either, but you'd probably have to add more sugar to soak up that liquid in the instant. Because I think with Instant Potatoes, there is def a little more moisture.

    Could you put coconut on the parchment first, then add the chocolate, the cookie, chocolate & the coconut.

      That might be a good idea, but I really think my potato had too much water and I needed more powdered sugar. These are 100% something my family will ask for again!

    if your Scottish and haven't eaten Macaroon before ...your NOT Scottish and its traditionally Milk Chocolate not dark although i guess it comes down to preference

      Really?? That is fun! I would have enjoyed this recipe 100X more if it had been milk. Not a fan of dark. But it was soo good that I will definitely make is again. But with milk and use more powdered sugar. LOL

    Milk chocolate and the coconut pieces aretoo big, It should be fine coconut
