Because people inside the walls wouldn't know what a monkey is as they have never seen one, but Berthold and Reiner called him a monkey as a hint that they knew more. Eren literally questions what the word "saru"/"ape" means when he is captured by them during season 2.
Yep, and more he missed is that after the wall of shinganshina broke and eren armin mikasa are orphans, Annie bertold, and Reiner can be seen in the background (which makes sense cause they attacked the same place and blended in with the same crowd afterwards)
Also Armin tells guy with cannon not to shoot eren because he’s the ones who’s gonna save humanity not destroy it, and the very opposite of that in season 3 when eren tells Levi the one who’s going to save humanity is not me but armin

About the knife thing yeah you are right. But Eren started using a knife exactly when he unlocked the memories of Kruger. He saw other titans doing it but he started doing it himself onky after seeing Kruger...But anyway glad you liked the video !
