I used the pecan flour mixture, added some flax seed, crushed walnuts. Topped with fresh raspberries, blackberries, and strawberries with my Choc Zero syrup. A winner!!
I did make these and let me tell you that I'm throwing away all other pancake recipes. They really are as good as the kids say. I made a change by adding a teas. of vanilla and a few Lily's chocolate chips to the top. But this recipe stands on its own. Thank you, Victoria!
I’m so excited for this recipe. I know it sounds crazy but I’m going to try using it as a batter for air frying eggplant and okra. Before Keto I soaked them in a thin pancake mix before dredging in Cajun cornmeal fish fry. I still can’t have the fish fry but this may work as a batter for all kinds of air fried things!! It may not work but I’m going to try it.
When I made pancakes with Paleo etc. I use to press turn over the pancake and press down with my spatula because that's what I thought you had to do to cook the middle .. yes I'm a guy who's just learning how to cook.

These are fabulous!!! 😊 I didn’t have sugar free syrup on hand so I mixed some liquid allulose with maple extract. So good! My husband , who is a diabetic, loved them. I'm UK I have spent a fortune this week buying everything I've made your flour and tonight wanted pancakes when I was making them I was tasting the batter and decided to add the cake batter essence and vanilla as well added bit more sugar in but used the liquid one omg I could eat them till they were coming out my ears I even got keto jam I'm in heaven after so much bland food Thank you so much Victoria you are an Angel xx Making ice cream tomorrow xx
I just made these using the Einkorn blend, 123 gm of it. I used a 1/4 cup scoop of batter and lightly spread the batter so they'd be tall and fluffy. They were very fluffy and light. For my tastes, I'd increase the salt to 1/4 tsp. and add about 1 tsp. vanilla extract. I got 9 4-inch pancakes from a batch. I'll definitely make them again.
Were they soft and slightly undercooked inside? I can’t get mine to cook through even if I spread really thin and cook for 20 minutes. I am wondering if it is the recipe that this is how they are or if I need to decrease water or something

@@sandraforbes7937 I used 1 cup unsweetened cashew milk and 1/4 cup water and 1 egg and 2 tbsp. melted coconut oil instead of butter. No, it needs the egg to help bind it. I used a large egg. Large eggs weigh about 2 oz. in the shell.

However just want clarification, in the video you used a griddle and at the end you said you baked it , in your recipe you say baked on griddle at 325. Are you saying in an oven or griddle? I don’t find my electric griddle temperature to be stable and usually burns or cooks unevenly. So can an oven be used?

I actually like them a lot instead of simply tolerating them as a keto version (like usual). I’d eat these even if they weren’t keto. I cannot wait to try the bread loaf recipe tomorrow! I'm curious could you make buttermilk pancakes, since its "butter" milk? My dad raised us on saturday morning thin delicious buttermilk pancakes, I'm curious if that could be done keto style.
I like to use buttermilk powder in biscuits. I measure the buttermilk powder according to the directions on the container (example 1/2 cup powder to 1 cup water if the recipe I'm using calls for 1 cup of milk). I whisk the buttermilk powder into the dry ingredients and use water in place of the milk called for. I love the flavor the buttermilk powder gives to biscuits, now I have to try it in pancakes.
I made your whole wheat einkorn keto flour mixture recently because I didn’t like the one I made with pecan flour. I like this flour much better. Im going to try this pancake recipe tomorrow I’ll let you know if my husband and I like it.

Hi Victoria thanks for all your wonderful recipes saves so much guess work for us viewers. I'm still waiting on my bamboo flour to arrive. So I made these with the oat fiber cause I wanted to use it up. the pancakes look great but are still quite wet inside. I even cooked them for 4 minutes. The texture doesn't look dry & fluffy like yours. Does the bamboo flour help with the texture? Making less soggy? Thanks
Using Victoria's recipes, I've baked cookies here in the Netherlands, and the results are great. The "breads" haven't turned out nicely, though. I tried several recipes, but I have never reached success. I just tried to make the pancakes, but it didn't turn out well. The "dough" doesn't bake/cook. Even though I have every ingredient required, the recipe isn't working at the moment. I'm thinking that elements like humidity, air pressure (milibars), and the fact that I'm below sea level could all be involved. I don't know. 😉Best wishes.

I got some of the Kroger syrup and was shocked at the carbs in it. 22 g for 2 tablespoons!! Not sure where the carbs come from. I was surprised you used this. I don’t think I’ll buy it again 😢 it used my daily allowance of carbs up.
I just made keto pancakes this morning with a different brand and they were just meh... I want to make your AP and SR flour when I can manage to find everything I need. Psyllium husk is hard to find. Also I don't have a coffee grinder yet.

I used the einkorn blend and they were very light and fluffy. I'd use more like 1/4 tsp. salt and 1 teaspoon vanilla but those are just my tastes.

Of friend! Those carbs are from ALLULOSE and you treat them like fiber! SUBTRACT THEM!!!!!! I hope you didn’t throw it away!
