Lugaw takes me back down to sweet memory lane with my dad. When I was a kid, my dad will pick my sister and I up from school then drive us to his latest discovery of a "Lugawan" place. Each of us has a bowl of lugaw plus pork barbeque then sago gulaman drink to wash it all down with. Eating lugaw was our sort of bonding moments together. My dad passed away many years ago. Whenever lugaw is mentioned, it always takes me to a happy memory. :)
Nelly describes it exactly how I would describe it. It's the best comfort food. It's something that would remind me of home specially during rainy seasons. I love you both.
As far as I know, Lugaw is rice porridge with ginger, roasted garlic and slices of hard boiled egg; Goto is also rice porridge with pork innards (lamang loob ng baboy); and Arroz Caldo (Spanish term) is rice porridge with ginger, somewhat yellowish, and with chicken (caldo) slices.

Arroz caldo( rice soup) becomes chicken arroz caldo when you put chicken on it, becomes goto when we put the tripe of a cow instead of chicken. Just plain rice soup is called lugaw. Add chocolate powder and milk, becomes champorado. 😊😊 enjoy

Another wonderful vlog. Lugaw, usually just plain rice porridge cooked in chicken stock. Arroz Caldo, is basically lugaw with Chicken. Very easy to make, just sauté garlic, onion, ginger and chicken, add PATIS to season then add in your rice, add chicken stock/water cook until rice is done constantly stirring from time to time to prevent the rice from sticking to the pan. You may add more chicken stock depending on the consistency you like. Add chopped spring onions, fried garlic and sliced egg to finish the dish. Enjoy!

Lugaw is rice porridge garnished with fried garlic, chopped spring onions and sliced hard boiled egg as toppings and with s squeeze of kalamansi added to complete the flavor. Arroz Caldo is the same but small chops of chicken is sauteed with garlic and onions with patis sauce before adding the rice then add water, boil until the rice gets cooked. The toppings are the same to that of Lugaw. You may add ground white pepper.
Of course lugaw is essential! It is my "go to" comfort food here in Toronto. I prepare a huge pot, cool it and stash in my ref. I reheat it when I come home from work to satisfy my hunger and craving for this Filipino food. Lugaw's base is plain rice porridge, then there is a wide range of additional ingredients you can add, e.g., flaked chicken, pork and cracklings, tofu, eggs, spring onions, etc. Yum!
With 1 cup of rice soak in water and boiled with salt or soy sauce top with fried garlic is a big meal or dinner for family of 4 to share during my younger days in the Philippines !!! Now I am in Texas U.S.A and we still cook that with chicken broth or beef !!!It is a comfort food !!!
