What I Eat In A Day | Healthy Vegan, Plant-Based Meal Options

  • After much demand, I've finally made my first "What I Eat In A Day" video!! First things first, I very rarely eat the same things day after day. This is an approximation of my favorite options throughout the day.

    Breakfast is very light for me. I like to focus on fruits and protein, with lots of great nutrients to kick off my day.
    Chia pudding (Coconut milk + chia seeds) with fruit, nuts and grain-free granola
    A green smoothie (with lots of greens and fruits)
    LOTS of fresh berries

    Lunch is usually a salad for me, because I love to mix the raw and cooked veggies. Don't skimp on the healthy carbs and fats!!

    My absolute favorite dinner is a bowl - With lots of great vegetables and flavors. This is a great way to diversity your dinner, and to make sure that you have different types of foods present on your plate!
    Dressing Recipe:
    1 tbsp tahini
    1 tbsp apple cider vinegar
    1 tsp turmeric
    1tsp curry powder
    2 tsp maple syrup
    Juice half a lemon
    1 garlic clove
    1 pinch sea salt
    A pinch of black pepper
    Toss all the ingredients in the blender, and blend until smooth. If you want a thinner dressing, add a tiny bit of water.

    Love you Sophie! I have been following you since I bought your book Gorgeously Green in 2009. My favorite breakfast is a Avocado Toast sprinkled with onion powder, garlic powder and black sesame seeds. I've been a huge fan of Ezequiel bread but now turning to more of a gluten free bread. I will definitely give your Coconut flour bread a try with the avo!

    Great video! I typically eat for breakfast overnight Oates with almond milk, chia seeds, flax seed and fresh assorted fruits . Delicious and satisfying

    Thanks for the video sophie💕 I'm almost completely plant based and one of my fav things to have for breakfast is like a parfait, a layer of oats, a layer of nicecream, a layer or browned banana slices ( out in frying pan with cinnamon and some people use a sweetener) add chopped dates to nice cream layer for chewiness, add buckinis for crunch or oatmeal and then fresh fruit of any kind 😍

    Sophie I just found your channel this past week, tried the dressing and I like it! I will be alternating this dressing with my coconut aminos dressing: 4 tbs Organic Coconut Aminos, 4 tbs lime juice, 1/2 tbs of cumin, 1/2 tbs paprika, cilantro miniced to taste. Add all ingredients to bowl, mix and enjoy. This recipe calls for 2 tbs of Extra Virgin Olive oil, which I omit in my dressing. Thanks for the great video!

    We've been plant-based for 7 years and every morning we eat a bowl of cooked cracked wheat topped with chopped apple and banana, ground flax seeds, cinnamon and raw date nut crumble (almonds, walnuts, dates, coconut, vanilla and cinnamon ground in a food processor). We are an American family currently living in Egypt so there are things we can't get here that we miss like blueberries, which we always top our cracked wheat bowls with. The biggest food I miss since living in Egypt is KALE!!! Actually it is challenging to get any decent greens and any plant milks here but we just have to be flexible and make do with what we can get! I'm very grateful we can get lots of beans and lentils here so that makes me happy!

    Oh i'm plant-based as well. My breakfast is usually a coconut milk chia pudding with less than 1/3 cup of gluten free oats. With chia seeds, hemp hearts, cinnamon, and pumpkin and sunflower seeds. I usually add some strawberries if i have or some apple chopped up and 1/2 a banana. It's my fav breakfast!

    Wow this is great! I'm kind of an artichoke girl(yes, Southern Cali)as far as salads go. Cacao powder or cacao nibs with almond butter in a morning smoothie sometimes

    I eat 2 egg whites, toast with peanut or almond butter topped with blueberries and raspberries or kiwi and banana and coffee, of course, can't live without that.

    Green smoothie this morn with raspberry and blueberries on the side. Curried teft with roasted veggies for lunch and just had homemade hummus on flatbread for a snack Sophie❤💕💖💗💙💚💜💞💟❣❣❣

    I have what I call a 'super juice' everyday! Today it was with baby spinach, cucumber, juice of an orange, apple and raspberries. My kids play guess the ingredients every time!

    I am planning on switching to a plant based diet...should I go cold turkey or ease into it

      Such a good question, Kathy. I went cold turkey, but I also recommend an 80/20 approach - 80% of the time you're plant-based, and 20% of the time you're more flexible. You can always bump that up to 90/10, but I think that's a good place to start!

    I absolutely loved this video! You are such an inspiration. I've been vegan for 8 years, but still find myself eating vegan junk food too often. I am 5'4" and 137lbs. I would love to get back to the 120s. Anyway, I guess I would appreciate more of these food videos for ideas and inspiration to lose weight and eat more whole foods. Thanks for your hard work! :)

      I don't necessarily. I do eat grains for much of the year. But sometimes I go grain free. I will do a video specifically on this.

      I think eating right for your blood type is REALLY specific. I've done some reading, but in general, I think plant-based is good for almost everyone!!

    I'm WFPB too and I loved your video but I hope you don't mind me saying that one comment that really grated on me was when you said that BECAUSE you are WFPB you need to make sure you get all your nutrients (at abt 7.30mins on the video)! I just think that makes it sound like we have to be so careful about what we eat so that we don't get deficient in anything and it perpetuates the myth that vegan food isn't healthy and lacks protein/calcium/iron or whatever bandwagon they want to pick on. Our diet provides us with a ton more nutrients than the standard diets of our meat eater friends and family (my family are confirmed meat eaters unfortunately) but they aren't bothered about getting enough vitamins, nutrients etc and they survive perfectly well (just not nearly as well as they could of course). It's not like meat or dairy contain a ton of vitamins that we are missing out on. Other than perhaps B12, we easily get all we need from eating a variety of plants.

      Katrina, I so appreciate this comment. You're right, we do get SO many nutrients on a WFPB diet. You are clearly extremely knowledgable and well-versed in this arena. I guess I was talking more to NEW WFPB eaters, who may be tempted to stick to one or two foods (like pasta) instead of branching out and eating the rainbow. I always think it's smart to be aware of what we're eating and that we're covering the nutrient spectrum in our diets, that's what I'm trying to convey.

    It seems like you have to do so much preparation for all this. Most people can't get all this food together. I like fasting and calorie restriction diets so don't have to eat much at all.
