How sturdy are they? Do you think this method can be used to make a dining table?

They are pretty sturdy, but you might have difficulty finding a form tube that's big enough to be a dining table. For dining table, I would recommend using this method instead: th-cam.com/video/BFu0HUoGn-0/w-d-xo.html

If I were planing on making this but painting it black would you still need veneer tape for the edge?

Yes, I would recommend it because the texture will be different. If you look at plywood from the side you’ll see that it’s rough and you can see many “layers” of wood with small gaps between each layer. It’s not smooth. When you paint over it you will still see that uneven texture. The edge banding will help make the table look more high end and finished!:)
