Hi Rik, As an 'Offaly boy' your pronunciation was correct as 'Off-lee'. I well remember, as a child, my grandmother making this probably every other week. Cold, in a sandwich with a lathering of Irish farm butter, was something to die for 😂😂
Hi dearest Rick I’m in the hospice at the moment they are trying to get on top of my pain but God these Angels will do anything for us patients.Im missing my four French bulldogs though so much it hurts 😢 so I’m escaping soon lol.Once again YOU have kept me sane kept me entertained kept me happy to my very core.I have been sharing you with two other cancer patients and they love you ALMOST as much as I do ♥.I AM going to get stronger I AM going home to my dogs and most certainly will be making this meatloaf and serving it with “Your” colcannon .Sending you so much love and thanks from York God Bless you xxx
stay strong Donna, you can get through this. I'm in Goole so not too far away and will have you in my thoughts. Been through it so I understand. I also love Rick's recipes.
You are my inspiration. You still haven't given a favourite recipe I can make???? Wishing you all the love and strength in the world. ♥ Thank you. Best, Rik
I'm Irish and I've never heard of a meatloaf being Irish. To me it's American! My old Irish mother never cooked a meatloaf in her life. Next time I meet an Offaly man I'll ask him about this. When I make this I won't be adding any whiskey though, we are those extraordinary Irish who don't drink so none in this house!
It is amazing how much Irish kitchen has in comment with Polish kitchen . My favorite - meat loaf 😋. This time I will try something new ( for me ) Bacon🥓🥓🥓 Yum !
I emigrated from England to Canada 8yrs ago this month.Traditional food from Brittania & The Island of Ireland is VERY important to me.Riks channel is one of my go to channels tbh.
Yummy! 😋 I have to make this - it looks so good. I made your Anglesey Eggs recipe, and it turned out delicious. I look forward to making this one as well. Thanks for sharing!
I learn something new every day! Whiskey in a meatloaf - what a marvellous idea! I don't eat pork but I guess this could also be made with beef. And a nice dark rum maybe? Slurp!
Perfect prenounciation Rik keep killing it.Nicer the next morning slice thick fried crispy with a couple of duck eggs and nice homemade wheaten/brown soda bread.
That looks fabulous, and even though I'm part Irish I've never come across this one. And nothing complicated about making it either. All bacon recipes from Ireland are fab so I can't wait to try this one. Think I might try some red pepper flake instead of the black or white pepper. As you always imply.... make it your own!! You made a great job with the caramelisation. I hope I can replicate that. It looks so yummy!
As much as I like a " meatloaf " , I always avoid it for its dryness , unless smothered with sauce or gravy , but yours looks so moist & appetising. I shall try it very soon your way ❤
I wasted no time in saving this to my recipe Playlist. Yum. I enjoy reading what you have written about the recipes in the description box. Ps, in my head I call it O'Fally because it is Irish after all 😅
Awesome! Thank you! I try to give a little description to help folks understand where the recipes come from. I will always do that if I can. Hope you are doing ok. Thank you. Best, Rik
Looking for something new to try with eldest grandson (he's 18 with autism, loves cooking and I've found if he helps prepare the dishes he'll try most things! He loves his bacon so this should be right on the money!) Thanks have tried quite a few of your recipes over the time but not commented, so thanks your channel is much all in our home! :)
You know Rik, I like all types of cuisines, and in the UK we have some of the most varied restaurants in the world. However isn't it a shame that there seems to be nowhere we can eat the types of traditional British food you regularly display.
Agreed! There are some amazing dishes around the UK and Ireland that have influenced the world. The folks that left on their travels years ago took their recipes with them. That's why there are so many similarities around the world. 99% of the folks on here on this channel understand that its the 1 % that cant cook, or are so ignorant to hear how a recipe evolved. The other problem is and I'm guilty of it too. The recipes change! Depending on the ingredients you have to hand. We just have to enjoy what we can when we can. Thank you. Best, Rik
I love to see these recipes! It’s fun to see how recipes evolved. People cook with what they have, and I can see how much of our American comfort food has been adapted. Here, I am happy to see the originals!.
When I read the title I thought it was a play on Offal and Bacon Loaf. Not the place but the organ meets. Yum But, this looks major Yum too. Will have to try.
Yes please! 🎉 I've got some very fatty mangalitza pork chops in the freezer, too fatty for me so I might dice them up very finely and use them up in this recipe. Thanks so much.
The last couple of years the stores have been selling diced bacon for seasoning. It is undoubtedly scraps leftover after they make the pretty slices, but it tastes fine and is normally less expensive than sliced bacon. Sounds like it would be perfect for this.
In America we’ve had “ends and pieces” in stores for years, to be used when you want bacon in a recipe like this and don’t want to cut up perfectly good slices. Glad to hear it’s becoming more widespread. Bacon makes everything better!
Hi, coincidentally for some years now I make my meat loaves in a similar way, but with any kind of brandy (cognac or so), a good dash of mustard (and horseradish if I feel adventurous), and not so much bacon in the loaf itself. [I have come to avoid eating meat loaf in other places, because it always tasted and felt like sawdust - like with pesto, I simply am over experiments for certain meals, because my own method brings better results (not my opinion only ;-) ).] Instead of the lining and the glazing I put bacon rashers into the glass (!) casing and fold them over the loaf. If they do not meet in the middle, I put some more on it, so that the loaf is completely covered with bacon. This helps to get it out of the casing, and bastes the loaf from the outside while adding a little crisp to each slice of the dish. But the glazing in this recipe looks tantalizing -> kitchen = lab. I will try it out with tomato paste (double concentrated), a little honey/ balsamico mixture, and mediterrranean herbs and spices, because I do not like the taste of most ketchups, and make my own when I feel so inclined. It took me some years of trial and error, but I also reengineered a sauce for Currywurst = German roasted sausage with a ketchup like spicy tomato sauce, and this seems to be perfect for this recipe! Ah, dear chef, so moist and it doesn't need any gravy. So looking forward to making my own. May the angels of the hearth continue to guide you. Thank you!
Fabulous! You’re so relatable, we all have some tin foil ready to be used again. That glaze looked perfect, I don’t usually add vinegar, but I’m going to try it. Meatloaf is always a winner! Thank you, Rik.
This reminds me of when I was a kid in the 90s going to Morrison's supermarket with my parents. They used to buy something very similar from the hot food counter there (think it was just a normal meatloaf)bloody yummy though!😋 haven't had it since. Yours of course looks incredible Rik! the Irish sure do have great food. Keep 'em coming mate
This recipe is a surprise, something new,and different.Bacon tastes so good, but there are only a few bites in a strip of cooked bacon. What a great way to stretch out that wonderrful flavor. into a whole loaf to feed a family. Bravo, Rik ! you keep coming up with such wonderful recipes. ,
This makes me mouth water This would make a great sandwich for lunch the next day . I don't know about anyone else but meat loaf always tastes better the next day this bacon loaf would be the same

there were 3 things growing up i flat out refused to eat.... bld sausage... liver.....and meatloaf . the meatloaf was literally from th depression era breadcrumbs and meat and a egg thats it. it ws like eating cardboard. you could bury it in ketcup it would still be dry as a bone.... thank you for reviving an old classic
Love all this old fashioned simple recipes. Such brilliant comfort food. Sadly I cannot eat onion but I swap it for celery as it has a similar texture. Keep up the good work.

Hello from Brazil!
Thank you. Love to Brazil. Best, Rik
Agreed! Thank you. Best, Rik

Hi, coincidentally for some years now I make my meat loaves in a similar way, but with any kind of brandy (cognac or so), a good dash of mustard (and horseradish if I feel adventurous), and not so much bacon in the loaf itself. [I have come to avoid eating meat loaf in other places, because it always tasted and felt like sawdust - like with pesto, I simply am over experiments for certain meals, because my own method brings better results (not my opinion only ;-) ).]
Instead of the lining and the glazing I put bacon rashers into the glass (!) casing and fold them over the loaf.
Some pine nuts wil also not be amiss in the meat farce, like in an Ancient Roman sausage recipe that is reproduced by a local butcher at the yearly festival in honour of the Romans and their heritage in the next city. The food at the festival always gives me good ideas for tweaks in everyday recipes ;-) .
Oh my, now I am hungry again, thank you for this inspiration, Rik!
