    ingredients
    For the Potato Pastry:
    - 350g mashed potatoes, cooled (ensure they're plain, with no added milk or butter)
    - 200g all-purpose/plain flour, plus extra for dusting
    - 1 tbsp granulated sugar
    - 1/2 teaspoon salt
    - 70g unsalted butter, cold and cubed
    - 2-4 tablespoons cold water if required
    For the Apple Filling:
    - 6 large apples, peeled, cored, and thinly sliced (a mix of Granny Smith and Honeycrisp is good for flavor and texture)
    -4 sweet eating apples cubed
    - 1 1/2 tbsp brown sugar, packed
    - 1 tsp ground cinnamon
    - 1/4 tsp ground nutmeg
    - 1 tablespoon all-purpose flour
    - Juice of 1/2 lemon
    Mixed spice
    1 tbsp cinnamon
    1 tsp Nutmeg
    1 tsp allspice
    1 tsp ginger
    1/2 tsp cloves
    1/2 tsp coriander
    Preheat your oven to 375°F (190°C). Bake 25 mins
    Air fryer 360°F (180°C). Bake 22 mins

    My mum used to make a wonderful dish she called Potato Lemon cheesecake....it consisted of a layer of shortcrust pastry in a flan tin, spread with jam then a mixture of mashed potatoes, sugar , eggs and lemon zest and juice was spread on top before baking...and then chilled overnight in the fridge.....it was very special .I have never come across anyone else who knew this recipe....I recommend it highly.

    So many things to like in this!
    I like that there's a really good depth of apple: I hate the flan type myself where it's all pastry and you don't get much of a hit of fruit. A good recipe has to be a good balance and for me, apple pie is all about the fruit.
    I like that you've used a variety of apples so you've got a good variety of flavours and of course, some are juicier, some are sweeter, some turn into pulp and some stay as chunks which is really great.
    I love that you haven't added too much sugar as it's a weakness in a lot of recipes. Too much sugar and you lose the taste of fruit and of course, you've added lemon juice which actually enhances the apple. But as you always make clear: it's up to the cook. It' so important to taste.
    For a lot of people by the way, the 'pumpkin spice' mix is probably the nearest thing they will be able to find to English mixed spice. It isn't identical but it's close.
    The mashed potato pastry looks perfect. So often with fruit and pastry you get pastry that's burnt round the edges, soggy in the middle and the rest like cardboard. That sort of even, springy texture definitely looks like a winner to me. Will definitely have to try this one.

    I bought a Kenwood chef 40yrs ago and the recipe book as potato pastry in it.I have always used it for cheese flans and its great.
    Without more ado the mash has no milk or butter in it and the creamed mash which you can cream in a machine or hand has to be cold before mixing into a dough.Great show mate

    So happy to find this channel! It's giving me lots of ideas for my weekly veg box - I love eating seasonally and locally but it can be a challenge sometimes. Traditional recipes with potatoes, cabbage, turnip, beetroot, leeks etc are a big help

    We don't cook with potatoe pastry enough in the uk, we should as it nutritionally contributes to one of the five main nutrients.... carbohydrate, essential for energy!

    I wonder if this was a way of using up left over mashed potato, or because they grew mostly potatoes in Ireland… I have never made this type of pastry and it seems a bit weird to have it with a sweet filling. Great way to do the apples as well giving some solid apple texture. Very interesting all round Rik! 😊

    The potato shell held perfectly, nice and stiff, but the apples fell out, so gotta figure what is it that keeps a regular pie from falling out like that. Maybe you should have let it sit and cool longer ?? Or is there an ingredient that should go into the apples to make them hold together ?? But no matter if they slide out, the pie seems delicious. I have no complaints .

      If cooled it will hold. You can use more cornflour/starch and make a thicker filling, that will work too! Thank you. Best, Rik

    Loved this But I wonder if I could use in a traditional deep pie dish with top and bottom crust? I’m afraid of using springform pan!

    How do you make the lovely curry sauce (not curry paste) that you buy with your chips at the local take-away? I asked how it was made and was told they use about half a dozen spicy ingredients, but also including butter. Chips just aren’t the same without curry sauce!

    Rik. when I make a german potato bread if the spuds are too wet I chuck in some instant mash to soak up the excess. Always have some in the cupboard for thickening soups and sauces. Got a bit more substance than cornflour.

    I wonder if this dough could be used to make apple fritter dounuts or if it could be modified to be airy like a honey cruller. i am asking because i would love to find a home made dounut recipie that could be baked and soft like the dough you made today. I may have to try one day but who knows i may just forget lol. love the way you cooked the apples its a shame we don't have the english spice here. but i would have used white sugar instead of brown or some splenda if i wanted low calorie. but you have inspired me sir thank you for that.

    I know I'm very late on this so don't know if you will see it. Potato Pastry was also a big war time recipe here in the states, along with Potato Bread and Potato Candy. I've seen it used to make Pasties (hand pies here), sweet or savory, but was also wondering if it is ever used to make a Galette, sweet or savory? Or is it too soft? Shirley in NH
