This looks so nice....I love rescuing old food so it doesn't end up in the bin. You gained a subscriber a while back when I saw you say that about chopping onions. I had always done it that way but yet always felt inferior because I saw so many people using that other silly method, and I just couldn't. Might sound silly but it made me feel like a bit of a failure. You sometimes can't change something you are so used to doing...I'm 62 and could chop an onion with my eyes closed the way you do it, because it's all I'd ever known. Anyway I am definitely going to try this on a day where food is running low before we go food shopping.

I’m not a big fan of bread pudding so I probably won’t be making this but I love the way you use up leftovers. More recipes with this in mind would likely be well received as frugality has recently become more popular. You reminded me of something that’s been on my mind ever since my wife’s heart attack. I do most of our cooking and stopped adding salt to everything. My wife has gotten used to it but we keep a shaker of pink salt on her doctor’s recommendation because it includes minerals other than sodium chloride that she needs, and I occasionally use it too. Neither of us like black pepper very much so I only use it in certain dishes that just seem wrong without it. Where I’m going with this is the constant hammering that we must “season” everything we eat with salt and pepper. When did this become universal? Has anyone else noticed that not using them on everything makes food taste better (or worse, depending on personal preference)?
I have watched so many of your videos and every single one has been beyond excellent. I have been extremely impressed with the Hysapientia oven you use, so much so that I have only gone and bought one. I couldn't believe how cheap (£135) it's going to make my main oven redundant. It is due for delivery today and this will be the first recipe I make in it.
