i saw a review on those wheels, the hubs have a built in breaking system that is always engaged. i guess they would make an ok training wheel
When in doubt, go a size smaller. Go with non-integrated handlebars and separate seatpost. Smaller can be extended bigger cannot be cut.
This is a decent bike in stock form. I think the owner should have big smile riding it. However, if looks & performance matter, I’d go with 50mm wheelset (Cadex 50 with the stock Cadex tires should be good), lower the stem by ± 25mm & change the stem to Giant SLR 100-110mm. This bike is a keeper. Simon Yates. & Jayco Alula used this in Taiwan KOM 23. The stock saddle is good, but fi’zi:k Vento Argo Adaptive 00 looks nice. C-Bear BB replaces the stock Shimano BB. Voila!

No matter how many money you spend on bicycle, you need to spend time to cycle.

This wheelset was on hot sale that time. Many of my friends got and have minor defects. Zipp is no longer the old zipp
