HEALTHY BABY SMASH CAKE RECIPE- 7 ingredients

  • In todays video I’m showing you how to make a healthy smash cake for your baby. There are no added sugars, only clean simple ingredients that you most likely already have on hand. I didn’t want to bother with adding any honey or maple syrup, the bananas and applesauce add enough sweetness. Plus if you have a baby under a year old and wanted to make a muffin version out of this, it would be safe for your baby!
    RECIPE:
    INGREDIENTS:
    1/4 cup coconut oil
    1 egg
    2/3 cup applesauce
    1.5 bananas
    1/2 tsp cinnamon
    1 cup oat flour
    1 tsp baking soda
    FROSTING INGREDIENTS:
    1 13oz can coconut cream
    Splash of beet juice for color
    INSTRUCTIONS:
    Preheat oven to 350. Blend oats to create oat flour. In a large bowl mash bananas. Then add the rest of the wet ingredients and mix with a hand mixer. Add dry ingredients to bowl and mix until combined. Grease 3, 4 inch ramekins and evenly distribute batter. Bake at 350 degrees for 12-15 min. Let cool on a rack.
    To make frosting, chill coconut cream in the refrigerator for 1-2 days. Using just the coconut cream (reserve the coconut water at the bottom) with a hand mixer until light and fluffy. You may need to add a bit of the reserved coconut water if the frosting gets too thick. Then add a splash of beet juice (or whatever you want to create the color desired) to the frosting. Freeze dried strawberries ground up are another good option to achieve a pink color. Then frost your cake and serve!

    So I tried it! Cake baked perfect! However, I had such a hard time with the coconut milk frosting to soften I did add more of the water also but it took forever so I ended up putting in the microwave so it could get soft and I used the hand mixer to break up and whisp and put it in the fridge for about 30 minutes to cool down but I definitely didn’t get the same texture as the video any way it still came out lookin cute and I’m very thankful for this recipe ❤

      I’m so glad the cake turned out! Coconut milk can be tricky to work with! Some brands work better than others and it has to be full fat. Sounds like maybe yours wasn’t full fat? I used coconut cream which has plenty of fat to make the frosting fluffy. Try coconut cream if you make this again!

      Yes! You could use butter, olive oil, a neutral oil, or avocado oil

    Hi, I love your recipe! But can I substitute normal flour instead of oat flour?

      Yes, absolutely! You will probably need less all purpose flour though. I haven’t made the recipe with it so I’m not sure the exact amount but I would reduce the amount to maybe 3/4 a cup and see how the batter looks. It shouldn’t be too thick.

      Yes! I would just start with 3/4 cup almond flour and see if you need to add more

      Totally! I would pull out the day before and let it defrost in the fridge to keep the texture. It should also be good for about 5-7 days kept in the fridge.

      You could try adding more applesauce or use pumpkin or sweet potato purée

      Butter would work! Just melt it first then measure

      Yeah same im scared but if they have teeth i could do but im stil scared to do if your smart you can do when hes 12 month x
