You guys must have plate for more traditional taste you guys have to use banana leaf as Plate
Place the main dish and Pou sambar and chutneys near main dish
For each bites you to dip it in all and eat

The ratio is simple, the taste of chutney or sambar shouldn't overpower the taste of idli or dosa because the chutney and sambar are mostly way too spicy than the batter used to make idli/dosa. The idea is to balance the taste, enjoy both. Here balancing is not 50-50, it's 80-20!! Enjoy n Have a great day!! Thank you.

Quote" In the last centuries BCE the coast became important to the Greeks and Romans for its spices, especially black pepper. The Cheras had trading links with China, West Asia, Egypt, Greece, and the Roman Empire. In foreign-trade circles the region was known as Male or Malabar. Muziris, Berkarai, and Nelcynda were among the principal ports at that time.[23] The value of Rome's annual trade with the region was estimated at around 50,000,000 sesterces; contemporary Sangam literature describes Roman ships coming to Muziris in Kerala, laden with gold to exchange for pepper. One of the earliest western traders to use the monsoon winds to reach Kerala was Eudoxus of Cyzicus, around 118 or 166 BCE, under the patronage of Ptolemy VIII, king of the Hellenistic Ptolemaic dynasty in Egypt. Roman establishments in the port cities of the region, such as a temple of Augustus and barracks for garrisoned Roman soldiers, are marked in the Tabula Peutingeriana; the only surviving map of the Roman cursus publicus.
Merchants from West Asia and Southern Europe established coastal posts and settlements in Kerala

    Invitation from India:
    Dear Giulia, Marcello and family,
We invite you to our humble mother land, Mother India. Where all are welcome and everyone has a place before they even arrive at the door.
We invite you to come to our country and enjoy the various festivities , food , culture and traditions. From Dosas in south India to Kashmirs Kulfi, from Shorshe Hilsa in the West to Dhokla in the center and Pav Bhaji in the west. Try all our delicacies. Our food is a representation of how multicoloured our people are.
We await your arrival with anxiousness.
    With love,
    India

Eat Idly or Dosa or Vada with coconut chutney first, then with Tomato Chutney or Ginger Chutney and finally with Saambaar. Eat with hand to enjoy the true taste. Rice is to be mixed with curry by your right hand fingers and then to be put into mouth by the same.

for me, it's 100% white chutney. nothing else needed for Dosa or idli

*ACTUALLY THE TASTE DEPENDS ON SIZE OF BITE YOU TAKE .. YOU CAN TAKE BITE ACCORDING TO YOUR MOUTH SIZE .. AND THE SIZE OF BITE OF ROTI / DOSA YOU CAN DIP IN SABZI / CHUTNEY ACCORDINGLY* .. 🙏

Sambhar and dosa with ratio of 1:1 and with Chutney and dosa 1:2 is enough :D.. And also try dipping with all the side dishes given and it brings all the taste together

Rasam consists of tamrind extract , pepper, cumin , tomatoes sometimes lentils water , I knew he would dosai with tomato chutney coz Italians use tomato sauce 🥫 in pizza and pasta that’s my favourite combination too I love dosai with tomato chutney, it depends on your taste my husband loves to dip his dosai with coconut chutney, tomato chutney and sambar , I like it to dip in sambar sometimes with tomato chutney separately

There's no standar ratio, we south indians would let the idlis swim in sambar😂 it's always better what suits you best

If you first dip your dosa, Bada, Italy, Uttapam etc into the coconut chutny and put it your mouth and then take sambhar with spoon simultaneously, it would taste better. Both coconut chutny and sambhar if taken simultaneously in one bite, it would taste much better.

Mix the tomato chutney, coconut chutney and 1.5 parts of sambar and try that with the dosa/vada/idli/uthappam. That's how we South Indians love the dosa/idli.

God it feels so happy to see Marcello just explode with joy and his giddy actions tasting the dishes. It's sure to fill any heart with pure happiness its such a treat. And on the topic of the ratio of chutney or sambar to dosa, I would recommend as said your instincts but a better way is to see how strong their individual tastes are since sometimes I just drench it in there if I don't feel like tasting the batter or just touch it because the chutney is too strong
