    Walnut Taco Filling
    1 medium onion, small diced
    2 cups chopped walnuts
    1 pack of taco seasoning
    1 tablespoon chopped chipotle chiles in adobo sauce
    1 Tablespoon red wine or apple cider vinegar
    2 Tablespoons vegetable oil
    In a large skillet over medium heat add the vegetable oil and onion. Saute until
    tender, about 5-7 minutes. Add the walnuts, taco seasoning, chipotle chiles in adobo,
    vinegar, and 1 1⁄2 cups of water, and bring to a simmer. Cook until the sauce thickens
    about 10-15 minutes. Serve with favorite taco shells and toppings.
    Walnut Feta Burgers
    3⁄4 cup refried beans (make sure they are vegetarian)
    1 cup walnuts
    1 cup cooked brown rice
    2 teaspoons chopped fresh dill
    1⁄2 teaspoon garlic powder
    2 1⁄2 teaspoons minced dried onion
    1 teaspoon ground black pepper
    1⁄4 cup bread crumbs
    1⁄2 cup feta crumbles (plant-based feta works)
    1⁄4 cup kalamata olives, pitted & chopped
    2 tablespoons vegetable oil, plus more for frying
    In a food processor add the walnuts and cooked brown rice and pulse until the
    mixture is the size of coarse meal. Add the walnut mixture to a large bowl and stir in the
    refried beans, dill, garlic powder, minced dried onion, black pepper, bread crumbs,
    and vegetable oil until combined. Fold in the feta crumbles.
    Using a 2-ounce portion scoop, divide the filling evenly. Form into a small puck-shaped disc about 2 inches in diameter. You should get 9-11 slider-sized burgers.
    Add a tablespoon of vegetable oil to a skillet and warm over medium heat. When the
    oil is hot add the burger in batches, making sure not to crowd the pan. Cook on each
    side until golden and crunchy, about 4-5 minutes. Flip and repeat.
    Serve on slider buns with your favorite toppings or condiments.
    Walnut Banana Upside Down Cake
    1⁄2 cup sugar, light brown
    6 Tablespoons butter, unsalted
    3-4 bananas, sliced lengthwise
    1 cup sour cream
    3⁄4 cup sugar, granulated
    2 eggs
    1 teaspoon vanilla extract
    1⁄2 cup vegetable oil
    3⁄4 teaspoon salt
    1 1⁄2 cup flour, all-purpose
    1 1⁄2 teaspoons baking powder
    1 1⁄2 cup walnuts, divided
    Make the caramel:
    In a 10” cast iron skillet combine the brown sugar and butter. Melt until sugar and
    butter dissolve and brown sugar starts to caramelize. It might separate but just keep
    whisking. Turn off the heat and cool for 10 minutes, then add the bananas cut side
    down and 1⁄2 cup walnuts.
    Meanwhile, make the cake batter:
    Preheat oven to 350 degrees. In a large bowl cream together the sour cream, sugars,
    eggs, vanilla extract, and vegetable oil. In a separate bowl whisk together the flour,
    baking powder, and salt.
    Add the flour mixture to the sour cream mixture and stir to combine. Add the
    remaining 1 cup of walnuts and stir in. Pour the batter over the bananas and bake
    until the center is set and sides are pulling from edges, about 35-40 minutes. Let
    cool for 10 minutes and invert to turn out.

    Hi, Damaris. I love all these recipes. I eat a lot of veggies forward meals. Can’t wait to try all of these recipes. Walnuts and bananas are some of my favorite eats. I have to make my own flavored walnuts, cause stores only have flavored cashews or peanuts. Love this channel. I missed you on Food Network. Blessings

    Are the walnuts supposed to soften in the taco mixture? Mine were still pretty firm. The flavor was great! I’m just wondering if the walnuts need to be chopped finer, since I had to chop mine by hand.

    So appreciate these recipes featuring nuts as an alternative to meat. I like to eat vegetarian, but I typically avoid shows featuring vegetarian cooking because the chefs inevitably use mushrooms-- crowing about how much they taste like meat, like they're the first people to say that, even though they're wrong. Mushrooms taste like dirt, iron and something I shouldn't eat.
