    BBQ jackfruit
    2 cans jackfruit, drained
    1 tablespoon chili powder
    1/4 cup vegetable oil
    1 1/2 cup bbq sauce
    4 buns
    1 cup shredded cabbage, green or purple
    Method: preheat the oven to 400
    In a large bowl combine the jackfruit the oil and chili powder. Toss to coat.
    Put on a cookie sheet in a single layer and bake until the jackfruit gets golden and the tips are crunchy about 30 minutes.
    Remove from the oven and add 1 cup of the bbq sauce and continue to cook for another 15 minutes.
    When you are ready to serve add 1/2 to a large bun, top with shredded cabbage and 2 tablespoons of the remaining bbq sauce.
    Jackfruit Chicken Salad
    2 cans jackfruit, drained
    1 tablespoon poultry seasoning
    1/4 cup vegetable oil
    1/4-1/3 cup plant based Mayo
    1/4-1/3 cup plant based sour cream
    2 tablespoon mustard
    2 stalks celery, diced
    15 red grapes, cut in half
    3 green onions, sliced
    1/4 cup pecan, chopped
    Salt and pepper
    Method: preheat the oven to 400
    In a large bowl combine the jackfruit the oil and chili powder. Toss to coat.
    Put on a cookie sheet in a single layer and bake until the jackfruit gets golden and the tips are crunchy, about 45 minutes. Remove from the oven and cool slightly.
    In a large bowl combine the Mayo, sour cream and mustard with a whisk until smooth. Add the jackfruit, celery, grapes, green onions and pecan and gently fold to combine.
    Cool in the refrigerator until you are ready to serve. When you are ready to enjoy serve in lettuce cups or over a bed of lettuce.
    Jackfruit nuggets
    Ingredients:
    2 cans jackfruit, drained and cut into 1 inch chunks
    5 tbsp mustard
    3/4 cup plant-based milk
    1 1/4 cups flour
    1 tsp cornstarch
    1 tsp poultry seasoning
    1/2 tsp garlic powder
    1/2 tsp onion powder
    Oil for frying
    Salt
    Ranch dressing to serve
    In a large bowl combine the flour, cornstarch, poultry seasoning, garlic powder, and onion powder.
    Toss the jackfruit with mustard. And add to the flour mixture.
    Roll each piece of jackfruit first into flour, then dip into the plant-based milk, back to the flour. Dust off any excess. Proceed with each piece of jackfruit.
    Heat a large pan with plenty of oil (the bottom of the pan should be well covered) and fry the nuggets until gold-brown, about 4-6 minutes per side. Remove from the oil and sprinkle with salt.
    Serve the nuggets with a side of ranch.
