I suppose the Empire's philosophy of ship design would work if the ships didn't always have an Achilles' Heel somewhere. The idea seems to be to build ships that can destroy anything and stand up to any amount of firepower. It would be crazy expensive, but the Star Wars universe does have some technologies in it to make that more economical and more practical. Galaxy-wide mining bankrolled by the empire, lots of automation and prefabrication, mostly performed by droids. Plausible enough for a fictional universe I think. :)
Star Wars draws a lot of its ethos for battle scenes from WWII, and before fighter planes really came into their own, in the lead-up to the war there was a race to build larger and larger battleships such as the Hood, Bismark and Yamato. Planes proved them to be impractical in the war, but the point being, people used to believe in the bigger-is-better philosophy for military design in real life too. Star Wars mimics that pretty well.

I believe it would require since very unique methods & tech to mfc ships of such great magnitude. Not to mention, the quantity.! If (we) were to try & attempt_the same, we would have to find a way to mine the Entire asteroid belt. And then Some! I would have to say, the_empire would have to have a dry dock yard on a planet or in space around a planet, to create such massive ships in such great quantity. These ships Certainly create A Huge fear factor.
