I'm Filipino and my sister is a chef who was trained in Indian Cuisine while she was working at a well-known international hotel. About 6 years ago, she brought the chicken biryani and murgh makhani among other Indian cuisine recipes at home and it was well-loved by all family members. To me, to the point of obsession XD. When we have celebrations here, pancit is now often switched to biryani rice which goes very well with most of the Filipino celebration staples like lumpia, lechon kawali, calamares, etc. To me, Indian food is a comfort food.

I usually cook my biryani in a pot, at first, I leave the lid on, and eventually I remove it to get rid of the excess water, so it doesn't become too soggy. Sometimes the sauce from the meat makes the rice too soggy. I can't really explain it, but you just have to eye it. Takes a lot of practice and patience.

adding slices of green bell pepper, in lieu of the chili leaves required, will give more flavor to the Tinola Soup. also, some spinach too.

Abinaya, loved that you said 'dosai', 'Tamizh Naad' and didn't use cutlery with the rice. Good going on being authentic. Stay the same :)

Eggplant omellete will be much better if you will put minced garlic, onion, pepper and tomatoes in the egg and beat it all together then add the eggplant and fry it till the sides is crispy

Native advice, side eggplant Omelet with minced fresh tomatoes and shallots on the side. Add salt or soy sauce or for adventurous dish mixed omelet fresh minced tomatoes and shallots and a teaspoon of BAGOONG. not sure if you call BAGOONG a fish paste or fish gravy but bagoong is if you want a salad dish. Add ons could be white raddish. 😁🥗

To be fair to godfrey he wasn't told the most ideal and traditional way to cook biryani. It's always best to boil and drain the rice then layer the biryani masala and rice, then cook on slow with lid on until the remaining moisture is gone from the rice and the masala and fluffy rice are well-infused. Cooking biryani in a pressure cooker that way is way more tricky and risky compared to the traditional way.

I've never seen a Tinola that brown. But i have to say, i think that brown toasted chicken and onions might make it taste even more flavorful

I usually cook my tinola directly boiling everything. Just like some people, they prefer to fry the meat first like how we cook adobo at home instead of just boiling everything lol.

  • @judj23

The tinola could use more water since it’s a soup. The biryani might have too much water or it was overcooked.😅 either way, the flavor was there.

Isn't it wrong to add oil to the pan and then pour batter on it? I usually add oil and then wipe it off with tissue and sprinkle some water before adding batter for perfect dose.
