I use my cast iron tortilla press to make wrappers for dumplings or bao along with tortillas. It's seriously one of my most used kitchen tools. The plastic one is a damn travesty.

It would be so interesting to see Dan showcase antique/classic kitchen gadgets still available today and compare them to the closest modern counterparts. Why do the antique/classic still work the best?
He does this in a lot of videos. See the iron tortilla press in this video. While that particular press may not be old, the design is at least a century old.

I think it's like 50/50 recency bias vs. time-tested designs. A lot of these tools in videos are trying to gagetize, solve, or modernize problems that either don't exist or aren't actually problems. They try to reininvent the wheel when we already made the wheel as simple and durable as we could have decades if not centuries ago. Combo that with how there actually are a ton of awful designs from bygone eras that simply didn't survive.
I think at some point Dan should feature some of the best products he has tests. Maybe a Well Equipped Hall of Fame. The jalapeno corer would go in for sure.
I would love for any of you to state what item is giving you leftys so much trouble... Because as a lefty myself, I have never had a problem using items in RL. You people in this thread keep saying "Items". Please, by all means, name these items.
The jalapeno corer looks surprisingly versatile and helpful, I could see using that for other small cored things like other small peppers or strawberries.

As an Hispanic, I’ve seen and done many fried picadillo tacos. I’ve only ever used toothpicks to seal the edges. Sure. U have to take them out later, but that’s the fun while waiting for the taco to cool. Plus it still leaves the taco free to open and add anything. Idk if it’s just me
Fellow Hispanic here. My grandmother would always use toothpicks to close up her tacos as well. Not gonna lie, I was a little disappointed when Dan said he didn't think there was a good alternative.
I've been binge watching all of Dan's videos. informative, insightful, and entertaining, he's a great addition. he's hilarious, so it's nice to see the editors having more fun with him
I like the jalapeno corer. If I decide to get it, I will test using it with the tool fixed in my right hand and use my left to rotate the jalepeno. That totally alleviates the problem with the handle only being a good fit in one specific orientation.

His remark on the Tortilla press greatly sums up some engineering "innovation" some engineers wanted to do for no reason. Don't fix what's not broken. Just refine it. Nice one Dan!
As far as the jalapeño corer is concerned, I would probably hold the tool stationary and rotate the pepper around the blade to core it, which is possibly why the handle has the grips the way it does.
Love this show. For the grater redesign: I was thinking put the grating on the side so you have a flat surface, thicken the other to hold it. Maybe put a cross brace to keep the thing from flexing. That way you can grate cheese and the cheese can stay in the Taco grater simular to a scoop and give a visual how much you have. Then you can pour on the Taco. Just a thought.
9:25 as a lefty i know that pain.... I went out with my mother to her friend's place for lunch. i was helping in the kitchen and i could not use their peeler to peel carrots. It was designed only for righties, and i was very carefully peeling them toward me to get it to work.
I tried to use peeler many times with my left hand and I never figured out how it work, until one day, may be... just may be I tried to use it with my right hand, and vola, that why. 😂
@@CynthiaPrice79 the problem with their peeler was very dull on 1 side after years of use. That side of the blade for lefty was useless. we had to go there almost every week, i made mother go to walmart on the way there and get me one i could use.
I'd love to see Dan take some classic things - like the box grater for example - and improve them. Ideally, things that are already close to perfect. Make him work for it. Earn that free food.
I think that's just his regular job. He probably gets paid more to do that kind of thing, and might even break his contracts if he discussed his designs publicly.
17:30 my impression is that the taco grater is made that way to put the taco inside of it so you could grate cotija cheese. Ooh yeah by the way in the majority of mexico we used cotija cheese in tacos, it is a dry and salty cheese that crumbles and grates easier than Monterrey Jack for example. :)
It drove me nuts that I pictured the hundreds of times I watched the toothpicks to their job way better than some of this junk and not a single mention.
When we fry tortillas for tacos dorados, we fill them, then use a couple of toothpicks to thread the edges closed and fry them. Tongs take them in and out of the oil just fine but… we never use that much oil! You just need enough to cover them when you lay them on their sides in a fry pan.
My mom used to make us these taco things that was just kindof mashed potatoes and cheese in a tortilla, then she’d secure the tortillas shut with toothpicks before frying. I could see the taco fry clip being useful for that, maybe save time fumbling toothpicks, save toothpicks, but it’s not something I could see making so often that I could justify getting an entire kitchen gadget for it
love this :) its so nice to see someone point out the problems and have suggestions to make it better. the developers of many gadgets don't really think it seams. and i just put the tortilla in the microwave for 10 seconds. and roll it up with the filling xD
Don’t disagree with the comments on the jalapeño corer handle, but should consider that an easy way to do 360-degrees of motion is to do 180-degrees with each hand, rotating in opposite directions.
Instead of the taco fry clip, you can use tooth picks :) that's what we use here in mexico for pescadillas. And it's also much quicker than using the other technique xd
This was a wild ride from start to finish. At the end of the day, food changes from place to place without a name change. I mean, we Mexicans love to criticize US tacos but will gladly sell three-inch thick sushi rolls with Doritos on top and still call it sushi.

The plastic tortilla press had the right idea, but it was very very poor execution. There's one problem with the classic press, and honestly it varies from person to person, but one side of the tortilla is always gonna be just a little thicker than the other because it's flat. The new one tried fixing that by making the press zone concave therefore changing where pressure gets applied. What they didn't take into consideration was you now need more pressure to flatten your dough, and they made it out of lightweight plastic.
modifying the cast iron tortilla press to get even tortillas is trivial though, you just need to move the hinge of the round plate a little higher so there is a gap of about 2mm (or however thick they want the tortillas to be) and a stop of the same thickness added to the other side of the lower casting.
I hope Epicurious make some prototype samples of the design improvement suggested and then test again to see how much improvement is there in the effectiveness of the product.

I appreciate the look out for lefties. Also I think the jalapeño corer could use a handle similar to a screwdriver since the motion is similar (just maybe not as bulky as some screw drivers; we aren't going for great torque here)
Yup last 2 videos he’s mostly skipped it. He’s up front about it though and if he feels it’s not necessary I’ll give him the benefit of the doubt he does it a lot. He justified it more in this one imo

Hi! Another alternative for taco fry clip is with a wooden toothpick. Once the taco it’s filled and closed “sew” the three sides with the toothpick (like a pin) and throw them into the oil… voila! 😁
For the tortilla fry thing, it can be done by one of those sticks made for corndog. Break those sticks into two pieces and use it. It's less flimsy than toothpicks.
The taco fry clip has an easy alternative. Since it's basically making an empanada, you'd simply make a classical empanada instead: throw together some dough, put in your fillings, pinch the edges closed to create a seal, and fry (or bake). Taco clip is definitely easier, and I think it has that much grip pressure for the express purpose of ensuring it seals your taco closed.
I think the taco toaster not toasting the taco completely so it’s not completely crunchy, gives you crunch without the tortilla breaking apart when you bite it. Aren’t those fried tacos really empanadas? I remember working for Jack in the Box, we deep fried tacos in a fry basket that had slots so the taco was still open to add stuff to it.
Some much needed definitions here: 1.- A tortilla by itself is called tortilla, not taco. 2.- Once you fill the tortilla with something and fold it, eat it with your hands then it becomes a taco. 3.- A tostada is a flat tortilla toasted in a pan or flat cast iron bed until hard, then topped with cheese or other things. 4.- A deep fried taco with cheese and meat is actually a fried Quesadilla! 🎉
I really wonder if making the fry clip bigger is a good idea. It looks ok in an open enviroment, like what he showed, but if you want to use a close-lid deep fryer, it can be a problem. Not sure tought if anyone makes fried tacos that way tought.
Thats an interesting thought there that should be considered atleast thought then we are running again with the problem that it needs too much power to keep pressing. What i would like on is instead of constant holding, a mechanism that keeps it open so it doesnt matter that you need to hard press because its just for the small time you open it and not constantly while you load.
re: corer The handle for spinning that has been refined for centuries is the screwdriver handle -- round with flats or hollows. It works well, and works in either direction.
Would adding metal to the Taco Toaster where it would contact the taco from the inside help at all? I don't know if it'd get hot enough to help but it might be better than just a hole.
My thoughts exactly! I was really surprised Dan didn’t even mention it or consider it a possibility. Maybe the taco itself is too much of an insulator, metal is problematic in a toaster (I don’t think it would be, just spitballing) or he simply didn’t think of it.

In Mexico we use toothpicks to close the taco and fry it, the advantage is that you don't need to buy dozens of Taco Fry Clips to make a party

If you only have a toaster sometimes you have to make do. When recipes cross borders they often end up with use non-traditional tools and techniques.

When I first saw it I assumed that the grater would be on the inside. That way you can do it directly over whatever you want to sprinkle cheese on.
The plastic “tortilla press” may have been mislabeled wherever you bought it. Those are actually dumpling or gyoza wrapper makers.

modifying the cast iron tortilla press to get even tortillas is trivial though, you just need to move the hinge of the round plate a little higher so there is a gap of about 2mm (or however thick they want the tortillas to be) and a stop of the same thickness added to the other side of the lower casting.
Just spin the dough if you're that concerned about it.

Hi! Another alternative for taco fry clip is with a wooden toothpick. Once the taco it’s filled and closed “sew” the three sides with the toothpick (like a pin) and throw them into the oil… voila! 😁
A good alternative for keeping a taco closed when deep frying is a couple of toothpicks. Do that all the time works like a charm.

For the tortilla fry thing, it can be done by one of those sticks made for corndog. Break those sticks into two pieces and use it. It's less flimsy than toothpicks.
You can also just twist the Jalapeno while it's in the blade though.

The taco fry clip has an easy alternative. Since it's basically making an empanada, you'd simply make a classical empanada instead: throw together some dough, put in your fillings, pinch the edges closed to create a seal, and fry (or bake).
Taco clip is definitely easier, and I think it has that much grip pressure for the express purpose of ensuring it seals your taco closed.
I was gonna say the alternative for the taco fry clip is crimping with a fork or fingers.
That doesn't work if you're using store bought tortilla/taco shells. You can only pinch the edges closed if it's still dough.

About the jalapeño corer, I think the idea is that you turn the jalapeño itself and not the gadget.
I think the taco toaster not toasting the taco completely so it’s not completely crunchy, gives you crunch without the tortilla breaking apart when you bite it.
Aren’t those fried tacos really empanadas? I remember working for Jack in the Box, we deep fried tacos in a fry basket that had slots so the taco was still open to add stuff to it.
Some much needed definitions here:
1.- A tortilla by itself is called tortilla, not taco.
2.- Once you fill the tortilla with something and fold it, eat it with your hands then it becomes a taco.
3.- A tostada is a flat tortilla toasted in a pan or flat cast iron bed until hard, then topped with cheese or other things.
4.- A deep fried taco with cheese and meat is actually a fried Quesadilla! 🎉
I really wonder if making the fry clip bigger is a good idea. It looks ok in an open enviroment, like what he showed, but if you want to use a close-lid deep fryer, it can be a problem. Not sure tought if anyone makes fried tacos that way tought.
Thats an interesting thought there that should be considered atleast thought then we are running again with the problem that it needs too much power to keep pressing. What i would like on is instead of constant holding, a mechanism that keeps it open so it doesnt matter that you need to hard press because its just for the small time you open it and not constantly while you load.

The handle for spinning that has been refined for centuries is the screwdriver handle -- round with flats or hollows. It works well, and works in either direction.

The thing about the cheese grater is that you can scoop the cheese up in the taco and hold it in there to bring it to a table.
Would adding metal to the Taco Toaster where it would contact the taco from the inside help at all? I don't know if it'd get hot enough to help but it might be better than just a hole.

Maybe the taco itself is too much of an insulator, metal is problematic in a toaster (I don’t think it would be, just spitballing) or he simply didn’t think of it.
