    Thank you so much for this video. I find your Cobb info to be about the best on TH-cam, you should be on commision! I think I will order an extra grill plate so I can make the holes. Love how you started the coals on the cooker! Please keep video'ing that Cobb!

      I’m sorry I never replied to you. Did you see cobb brought out a grill plate that does the same thing

    Unfortunately, the holey modification renders the griddle plate less efficient. Part of the design is meant to keep grease from dripping directly onto the charcoal, causing flare-ups. The other design function is to radiate infrared heat, (no longer functional due to the holey modification), which cooks large cuts of meat more evenly than simply radiant heat. Another thing is that you might want to consider is removing ALL of the remaining Teflon coating, and seasoning the plate with oil, (if you have the steel version). The little flaking bits and pieces of Teflon that get into your food, or fall into the burning embers is probably not a good thing.

      Thanks for your feedback. This mod is a bit of fun and was done on an old plate. I have a new plate that I use for roasting and smoking. I wanted to grill on my cobb too and this mod allowed me to do that and it really works well. Cooking with the lid on kills all flareups. Yes I'm asking the cobb to do something it's NOT designed to do but it works really well. Have fun smoking roasting braaing.

    That's a very strange modification: The idea of the closed middle is that the fat doesn't drip on the briquettes. If you want a BBQ, why use a cobb and not a Weber Smokey Joe or something?

      On line is the best place. Where are you based? I would go for the cobb air. You can control the temperature with airflow.
