If you like monster hunting stories or pieces of media I recommend the manga Drifting Dragons. The life of people that depend on hunting dragons, getting the corpse, then cut it down to sell the parts and eat what they don't sell, kind of a chill manga but the drawings are amazing. Check it out!
And the dragons aren't even "draconic" in appearance, more like giant sky slugs And I love it! It emphasizes the idea of a dragon even further paradoxically

The games I've most replayed in my life were Monster Hunter World and Stories 2. Why? Cuz monsters are cool, hunting them is cool, learning about their biology is cool, exploring the maps is cool, searching for a Mizutsune egg but taking decades to get one because I either killed the mother accidently cuz the paint ball didn't work or just because they're extremely hard to find is... Not that cool. Damn you, Monster Hunter Stories 2! LET ME HAVE MY GODDAMN MIZUTSUNE >:(
As much as I love Hunt: Showdown I don't really think it classifies as a "Monster hunting game". Yes, maybe during your first few matches you believe the game is about fighting monsters and bosses mainly, but for active players the real thing is facing other hunters and be the one that extracts. That's why everyone calls it a extraction shooter. If the game was solely about killing a monster and extract a bointy, I wouldn't play it, I actually don't understand those who get the bounty and escape without facing a single player. Yes, I like the bounty mechanic, but in my opinion it's just a mechanic to encourage gunfights. Sorry for the long comment, I just love the game I guess

monster hunter franchise takes place in the distant unstable future which is why megafauna makes sense there are also alot of ruins that suggest this. as well as the hunters being superhumans that can contend with them
TW3 and MHW were awesome! I'd add Evolve in this list despite their game's failure. Horizon Zero Dawn too! Both games had a unique take on a sci-fi themed monster hunting setting

Made in Abyss is straight up a marvel of worldbuilding when it comes to the creatures that the Abyss can throw at the protagonists. Again, not really about the hunting, but certainly about cataloguing and even slaying them from time to time.
I have to say the novel series by Larry Correia (1st volume is "Monster Hunter International") and the mangas of Berserk... for videogames you are pretty much a monster hunter in most JRPGs, but the Monster Hunter, Xenoblade Chronicles, Ys and Tales games are my favourites
A weird explanation as to why Hunters in Monster Hunter's universe can wield these batshit insane weapons, is due to the fact that we are the player and players as a whole are all weird super soldiers who have been experimented by some weird older species. ( Btw this lore is iffy at best, And to many this has been Ret-conned )

Real freaky shidt There's even one that straight up doesn't die at all, the Hannibal can stay immobile after its core is destroyed, then it just regrows the damn thing as if nothing happened 😂
Dude if you like depictions of good ol' monster huntin', you need to watch Primal. Seriously, watch the first reveal trailer with all the monsters screaming at the camera and tell me that's not MH as fuck. At least the first season, the second one leans more into the human side, but the first season is pure raw violent nature and survival of the fittest. It's about a dinosaur riding caveman fighting all sorts of beasts, you can't go wrong with a concept like that.
If you like supernatural I'd suggest reading something is killing the children it's a really good comic well written and has similarities with supernatural
