A tool I started using many years ago is a traditional filet knife from the sporting goods section. Very sharp and flexible for deboning and removing thin layers of unwanted tissue.

Hi Roland, A question please ? can I mix water chestnut flour with corn flour and do I need to crush the water chestnut flower in a pestle and mortar prior to mixing and can I use water chestnut flour in the second addition of flour to make a batter more crispy. For this recipe, just corn flour/starch will be good enough, the corn flour is there to help lock in the moisture as well as tenderise the pork chop. It’s not supposed to be “crispy”

Yes you can, just spray some oil over the pork chops before you air fry them.

Can we use air fryer instead of deep frying?
You can, at 180 degrees Celsius, air fry for 10mins before turning it up to 200 degrees Celsius for another 2-3mins
