Oh Paolo, I went to this restaurant frequently when I was university student, it was almost 30 years ago! This was called "Mori-shoku" among students and was VERY popular at that time also. I'm living in Kobe now so your video brings back memories of my good old days. Thank you so much!
Welcome to Kobe. I don't eat out now so my information is limited unfortunately. But I know "Yo-shoku Asahi" is popular Mori-shoku-like restaurant. Yakiniku (Japanese style beef grill) restaurant "Mangetsu" is also popular. I know these because I use to live in Hanakuma area. I hope you enjoy your life in kobe. @henby_

@@aznantboi correct, traditionally this is the only way. Because in Japan traditionally only men can inherit the family business, if you have only daughters then you do what's called mukuyoshi (adopting a son in law).
That was hard to hear, the owner is 4th generation and they’ve kept the business going for 120 years. I hope someone will keep it going for the next generation.

I was a chef for 14 years. I think i sat with my chef and co workers maybe once or twice in all those years for a meal. Its so crazy to see kitchen culture in Japan and how different it is from here. Breaks my heart to see his business not being taken over by the next generation as it has propspered for so long. If i knew the language id drop everything to help that man. One thing that I learnt from your video and the people on the video is that YOU SHOULD LOVE YOUR JOB. Every job is tiring but if you love it, you enjoy it, the job will be not that hard, the job will be fun. One of my friends lives in Japan and her daughter is a university student at Tokyo University. She always talks about the food being good so I told her about your video. She quite enjoyed seeing behind the counter with her daughter since she went to school here back in the early 2000s. 😊 And 44 years is so long. A congrats to both on a successful marriage.
It also stands out for me, but I think it sounds out of place and contrived. Maybe he's trying to appeal to a younger audience? I don't think Paolo is much younger than me if at all, so it seems weird because my peers don't use gen Z slang but their kids might.

Just got back from a week in Tokyo and Kyoto. It's amazing how easy it is to eat delicious and healthy meals so inexpensively there! No matter where we went we'd find fantastic meals and it rarely cost more than 5-10k Yen to feed the 4 of us, even with drinks
my gosh they work so hard that it almost breaks my heart, while also warming it at the same time. they deserve so much for working so hard and feeding all of those students/salarymen all these years!

This video made me subscribe. I also work at a family owned restaurant as a local having recently moved there and they treat me like family! I owe them my sincere gratitude as well as these fine people who continue to serve their community through covid and hard economies!
I LOVE how well they treat their employees in Japan's restaurants ! The fact that they feed them daily for FREE is incredibly generous !! MOST restaurants in North America will charge a fee for meals with a slight discount and place multiple conditions in what you can and can't order. This is especially true in chain restaurants.
Just got back from my first trip to Japan and it is amazing how many local food shops are everywhere. It is crazy how much easier and more affordable it is to eat healthy in Japan compared to North America. Also, was pretty excited when I went to Tsukiji Fish Market to get myself a bottle of Paolos Premium Kaminari Hot Sauce. Tastes really good and has a good amount of heat. Kind of funny that the hot sauce was the one thing I wanted to really take home from the trip.

Hey Paolo, I have seen many videos of Japanese workers made by you and I can say that Japanese people are most happy hard working people in the World. Not a single word of suffering or any complaint from their mouth. Their passion towards work and dedication towards maintaining work ethics is unparalleled. The world had only seen the Ethics and hard work of Japanese workers through Automobile and Electronics industry only but you have shown many Japanese people through various fields who work very hard. Their happiness is contagious and no doubt that many MNCs have adopted their working styles (culture) in their organizations. Its very entertaining as well as informative to watch your videos. In my opinion, your vlogs are also an another form of video tourism which brings great content to viewers.

Could never happen because our culture is different. We value efficiency and affordability. To get those? Quality has to be sacrificed. Most of us aren't willing to pay for quality food.

I live far from Japan (I'm in Central Europe) but in a sense, this place reminds me of the cafeteria at my late mother's workplace where I'd sometimes go eat lunch with the vouches she gave me.
