계란 5개
들기름 6~7T
대파 반개
국간장 1T
* 만들기
1.믹싱볼에 계란 5개 까기
2.대파 반개 송송썰기
3.후라이팬에 들기름 4T 넣고 뜨겁게 가열하기
4.계란 넣고 센불에서 바닥이 노릇하게 굽기
5.흰자가 익으면 국간장 1T 둘러넣기
6 가장자리가 노릇하게 튀겨지면 접시에 담기
7.계란위에 대파 골고루 올리기
8.후라이팬에 들기름 2~3T 넣고 연기날 때까지 가열하기
9.대파위에 지글지글 붓기

    모든 요리에 있어서 오랜경험이 축적된 숙련도 (기술) 가 중요하지만 요리는 불조절과 타이밍이 뒷받침 되어야 함. 재료의 본질과 성질을 잘 알아야 하고. 특히나 주재료가 달걀인 요리는 불조절이 가장 핵심이고 중요. 같은 중불이라도 사람마다 개개인의 시각에서 그 기준이 다름. 불에서 내려야 할 타이밍도 절묘하게 잘 잡고 요리를 완성하는데 중요한 모양과 성형을 하는데 많은 연습으로 축적되는 숙련도가 요구 됌. 영상에서는 그냥 쉬워보여 누구나 한번에 성공할 것 같지만 많은 실패를 거듭해야 함.
