Hey brother, nice pit! I’m helping my son build a 250 gallon smoker for his Ag project. What did you use to insulate in the gap of your firebox?
How much fabrication would it take to not use the legs provided and build a custom table?

Really nice smoker bill. I actually just found a 330 gallon tank on Facebook marketplace. It’s a little bit of a drive, but definitely looking forward to possibly going to get it and picking it up and creating a smoker.

The engine high temp clear. It’s rated at 700° but you can touch the side of the firebox while cooking it’s so insulated

Curious but don't the alum pans come with a lid and if so, is there an advantage of using foil rather than the alum lid?

Just figure out a budget and start looking at trailers. I’ll bet there’s a ton on marketplace out there. You can do it like I do where you cook it ahead and hold in warmers or do it the cheaper way to start and just get a permit and a 12x12 tent and start slanging those things!

That would be great for smaller projects for sure. When I get back from CO I’m going to do my first cuts soon. Can’t wait to share it with yall

Hi there! I can do one this week. Only thing I changed was I sold the deep fryer because I didn’t want the hassle and cleanup involved in it. The fire suppression system for it is like $4k! But I’ll do an interior walk around and give some tips on how I have it setup. Cost of the trailer as it came equipped and shipping was $26,500. Things are going well so far. I’m scheduled 1-3x per week and have catering mixed in there too
@@kansascitysmoked6263 I totally agree about the "Fryer". When I had my little Mama's Kitchen Cafe... I did not fry anything *deep fry... and I had NO BUGS... This is a great set up... I am so happy for you.

Lately all I’ve been thinking about is owning my own food truck. My dad owned one when I was young and made a lot of money off of it. He was happy and it was always cool to me plus I want to be my own boss 🙌❤️
I did bbq on the DL for a long time. Almost 2 years before I jumped into the food truck game. If you time it right you won’t struggle as much as I did at first. I started in the fall when a lot of busy places schedule out the whole year so I couldn’t get on their schedules. Wing ready to go and licensed by February or March is good timing. Go for it!
whats the total weight of that trailer?
I’m not sure loaded. I may need to take it to a weigh station and see. Makes my f150 sag pretty good and I have an add a leaf

What are the temp points for each stage? Temp at removing from smoker, you wrapped at 170, back on smoker to ??? Temp, pulled and set on stove down to 180, then cooler, temp rose to?? Great video, my briskets suck, looking for a method or cook a 4 pounder since I have a small family.

All in with delivery for just the trailer it was $27k.

Soon! My food truck and catering schedule has been crazy busy. I just got myself a new off marketplace air dryer and motor guard filter. Plan is to get it plumbed in next week and do some test hits on it and do another video soon.

Whats the queso recipe
2.5lbs Oaxaca cheese 1lb cheddar 1lb pepper jack 1 block of cream cheese 1 whole Mexican Crema container 1/2 cup half and half 2 cans of Rotel Add your favorite bbq rub prolly 3 tblsn or to taste And I added 1.5lbs of chopped brisket You can smoke it or just use a crock pot Try it and let me know!
