Wrapping in the rice paper was a good idea. They came out great. When I tell people to use fish sauce in a dish, I warm them NOT to smell it. If you smell it, you will never use it. Ha, ha. Hello from Oregon US.

I wish we could get more recipes like the rice rolls in Vietnamese restaurants. Same with Mapo tofu - I would love to try it but no Chinese restaurants around here in Nova Scotia would make it. They prefer to make Canadianized versions of Chinese recipes and it really isn’t very authentic. It’s very frustrating. At least I can buy more and more ingredients here. And I feel bolder about making my own Mapo tofu having seen you make it. I even have the right bean sauce for it. I think the steamer is a little out of my reach though. 😊

I usually go to Big Catch for sashimi but it's soo far away 🥹 I really hope your husband slowly begins to like fish sauce, I feel like it's an acquired taste once you start eating it more :) Also what region of Vietnam (north, central or south) is your family from?
