Scouting for Fall Napa River Stripers…Big Shticks!
A quick session to see if the fall stripers have arrived on the Napa River. The action is decent with the right presentation & tidal movement. The evening king tides & subsequent minus tides have heavily stained the water. There is a bite to be found on lures. But it is by no means is in full swing. As the morning & evenings get cooler I surmise the bite will turn on & become more steady.

As someone who BBQ’s. Cooking large quantities or “big meats” is something we do all too often. More often than not, we’re stuck with a large amount of leftovers. For that reason I will be trying different variations of this recipe to see if I can nail down a go to version.

    This recipe is great - so easy and my family loves the taste! I just have one issue... I can't get the rice fluffy. 😞 I've done this recipe 4 times, and every time the rice is al dente, almost chewy. I know not to lift the lid until the time has passed, and I've tried turning the heat down lower, thinking that maybe the water simmered off too fast. This last time, I just put another 1 1/2 cups of water in the skillet and let that cook down because I was frustrated. The leftovers were referred to as "play-doh" by my family: the taste was there but the consistency was not. Does any one have *any* recommendations, please??

      @BigShticks 12 วันที่ผ่านมา

      @@NanCRow To achieve the texture you desire I use 1.25-1.33 cups of water per cup of dry rice. Cook for an additional 5-6 minutes avoiding opening the lid. Remove from heat & allow to steam for an additional 3-5 mins. Fluff with a large spoon .

    • @BigShticks
      @BigShticks 3 หลายเดือนก่อน

      @@wayslifestyle6519 If I was trying to achieve 93% lean I would trim any & all solid fat away from the brisket, chuck roast or shoulder clod. Doing so would leave you with something in that ratio given its intramuscular fat. Or, you can simply buy select graded cuts of beef & grind away leaving the amount of fat you find to be sufficient. However, given that fat renders when cooked & is easily discarded I don’t find there to be a need to remove all fat. It all boils down to end stage cooked weight & what I need that to be. If I cooked 1lb of 80/20 the end stage cooked weight will be somewhere in the neighborhood of 12-13oz after rendering the fat & straining. I will say that I find ground meat cooked with little to no fat is grainy in texture & inherently dry. Which to me is off putting & has a terrible mouth feel. But that is personal opinion & understandably is not shared by some. However, I do find that meats cooked in its own fats enjoy a much better overall flavor & texture when strained off as opposed to cooked with little to no fats of its own. Again, this my opinion from my experience & of course you are to free to exercise your own judgement & create a product that suits you best. Thanks for watching & commenting.

    I'll probably be taking my yak out there sometime. Been checking out the back sloughs in "The Field" because it's basically my backyard, but this area just looks more open... and you killed it! Good stuff with the limits. Fish on Pare.
