Double Chocolate Muffins Soft and Moist - EASY RECIPE
If you're a chocolate lover, then you have to try these double chocolate muffins! This easy recipe makes soft and moist muffins with lots of chocolatey goodness. Plus, the added chocolate chips make them even more irresistible! Perfect for breakfast, dessert or an anytime treat. Trust me, you won't be able to resist these delicious muffins!
Ingredients:
250 grams of soft butter
250 grams of dark chocolate
2 tablespoons instant coffee
180 ml of boiling water
90 grams of self-raising flour
140 grams of white flour
Half a teaspoon of baking soda
Half a teaspoon of salt
70 grams of cocoa powder
350 grams of sugar
4 eggs
2 tablespoons of oil
120 ml whipping cream
200 grams of chocolate chips
Preparation:
▪️Heat the oven to 160 degrees 320F
▪️Arrange muffin liners in a 12-hole mold.
▪️In a large bowl, whisk all the dry ingredients - the flour, baking soda, salt, cocoa powder and sugar.
▪️In a medium bowl, whisk the eggs, oil and whippingcream.
▪️Meanwhile, in a medium saucepan, melt the butter, coffee, boiling water and dark chocolate. Note, melt over low heat and stir so as not to burn the chocolate.
▪️Remove from the heat.
▪️Add the egg mixture to the dry mixture and mix - the mixture will be very dry.
▪️At this stage, pour the melted chocolate mixture and mix well until you get a uniform and smooth mixture without lumps. Mix in the chocolate chips.
▪️Transfer the mixture to a liter measure and pour into the 12 muffin liners (without a mold this will not work, the Muffin liners will lose their shape and the mixture will liquefy out).
▪️Bake for 20-40 minutes until a toothpick inserted into the heart of the muffins comes out with moist crumbs.
After baking, sprinkle some chocolate chips on top, the heat of the muffins will melt them slightly.

Ingredients:

Ingredients: 2 1/4 cups all-purpose flour (287 grams) 2 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 cup granulated sugar (200 grams) 2 large eggs room temperature 1 cup buttermilk 240 ml 1/4 cup sour cream (61 grams) 6 tbsp melted unsalted butter (84 grams) 1/4 cup vegetable oil (60 ml) 1 tsp pure vanilla extract 1 1/2 cup chocolate chips Instructions: Pre-heat the oven 425ºF / 218C Grease or line 12 muffin tins with baking paper liners. In A bowl mix the eggs, buttermilk, sour cream, melted butter, oil, and vanilla in another bowl. Add the flour, baking powder, baking soda, salt, and sugar in to a bowl. And mix with a spatula or a mixer until almost fully combined. Add the chocolate chips and mix. Cover the bowl with a towel and let the batter rest for 30 minutes. This step is optional but helps the muffins obtain a taller rise. Fill up each muffin cavity until the batter reaches the top of the muffin pan. Top each muffin with a few more chocolate chips if desired. Baking: Bake in the pre-heated 425ºF / 218C oven for 7 minutes. Lower the temperature to 350ºF / 176C and bake for another 12 to 15 minutes until golden around the edges, and a toothpick inserted in the muffin should come out clean. Let the muffins cool down before serving.

Add half of the milk, mix to combine. Add another third of the dry ingredients and mix. Follow by the remaining milk. Lastly, add the last third of the dry ingredients and mix on low speed until incorporated. Divide the batter evenly among the cupcake liners, filling them about two-thirds of the way. Bake for about 18 minutes. Start checking the cupcakes at the 15-minute mark, and keep baking and checking as necessary. Let the cupcakes cool before filling and frosting. Spiced Buttercream Frosting: To make the frosting, place the butter in the bowl of an electric mixer. Beat on medium-high speed for 2 minutes, until very fluffy and light in color, scraping the bowl once during the process. Add half of the powdered sugar to the bowl with the spices. Mix on low speed until combined. Add the remaining powdered sugar and 1 tbsp of heavy cream to the bowl. Mix on low, then increase the speed to medium-high and beat for 1 more minute. If the frosting is too stiff add the remaining tablespoon of heavy cream. Add the vanilla and mix to combine. To assemble: To assemble the cupcakes, remove the center of each cupcake with a spoon, or cupcake corer. Next, spoon some peach filling into the middle of each cupcake. Place the Spiced Buttercream Frosting in a piping bag fitted with the piping tip of choice. Pipe a tall ring around the edge of the cupcakes, leaving a hole in the middle. Spoon some more peach jam into the middle of the frosting ring, top with streusel crumbs.

Hello :) Instructions Peach Filling: Prepare the peaches by peeling with a vegetable peeler, and chopping into small pieces. Place the peaches, the sugar, the cinnamon powder, and lemon juice in a medium saucepan. Bring the mixture to a boil over medium heat. Stirring occasionally, let the peaches cook for about 10 minutes until the syrup thickens. Mix the cornstarch with the water and add to the pan with the peaches, stirring immediately as you add it so the cornstarch doesn’t clump up. Cook for another 2 minutes while stirring, until thick. Remove the peach jam filling to a bowl, and cover with plastic wrap directly on the surface of the jam. Let it cool down, then place it in the fridge for at least 2 hours.

In a mixing bowl, mix butter, white sugar and brown sugar 2. Add 2 eggs 3. Mix until fully combined 4. Add all the dry ingredients: flour, Baking powder, soda and cornstarch 5. Mix until fully combined 6. On a cutting board, chop pecans and Transfer the pecans to the batter 7. Add chocolate chips to the batter and Mix until fully combined 8. Keep the batter in the fridge for about 30 minutes 9. To make Nutella coins, make circles of Nutella on baking paper 10. Transfer to the freezer for about 15 minutes until fully set 11. Use a large spoon to make the cookies 12. Put Nutella coin into the dough 13. Transfer each cookie to a baking sheet 14. Place the cookies in the freezer for 30 min to set 15. Preparation: 1. Preheat the oven to 180C / 356F. 2. Grease the baking mold with butter. 3. In a medium bowl, mix eggs together with milk, vanilla extract and. 4. add all the dry ingredients: flour, cocoa powder, salt, cornstarch and baking powder. 5. Mix gently until combined. 6. Add the melted butter. 7. Mix gently until combined. 8. Transfer the batter to a piping bag ( or use a spoon) 9. Pour the batter into the slots in the baking mold. 10. Bake for about 9-10 minutes until the edges are browned 11. Immediately after baking, take the cookies out to cool completely. for the chocolate: 12. Add the chocolate and a teaspoon of oil. 13. Melt the chocolate in the microwave until completely melted (make sure to check every 10-15 sec). 14. Transfer the melted chocolate to a piping bag. 15. in a baking mold, put a teaspoon of melted chocolate in each slot. 16. Put the cookie on top of the chocolate and slightly move it to the sides. 17.
