    * Pie Crust Ingredients:
    - All-purpose flour 370g/3cups
    - Sugar 2tbsp
    - Salt 1/2tsp
    - Butter (unsalted,cold,cubes) 227g/16tbsp
    - Water (cold)7-8tbsp
    - Extra flour for dusting
    * Apple Pie Filling:
    - Honey crisp apples 3-3.5 lbs/8-9cups (medium thick slices)
    (Granny smith, Golden delicious, Jonathan,Braeburn)
    - Cinnamon stick 1/2 piece (2”inch)
    - Clove1
    - Star anise1
    - Nutmeg 1/2 piece
    - Vanilla extract 1tsp
    - Corn starch 3tbsp
    - Lemon zest1
    - Lemon juice 1tbsp
    - Brown sugar (packed) 1/2cup
    - Egg wash 1
    - Butter(soft, unsalted)5-6tbsp
    - Pie dish size 9inch
    Directions
    - For flaky pie crust: first measure flour with weight scale, add flour, sugar salt into a food processor and pulse2-3times to mix the dry ingredients.
    - Cut the butter into small cubes then add some butter pieces into the food processor in batches and pulse few times until texture looks coarse or rough mix. Add one tbsp of ice or cold water at time while mixing dough, repeat the process of adding water until dough clumps come together or you can hold the mixture by squeezing between your palm and fingers. If it’s not falling apart then spread out dough crumbles on to the cling sheet. Pull all the corners and bring together to shape dough into round flattened disc, wrap with cling film and refrigerate for minimum 30 minsor4 hours to overnight.
    - For apple pie filling: set dry pan over medium-high heat,add cinnamon stick, star anise,clove and piece of nutmeg to dry roast. Once they cool down, grind them into the spice blender. In a large mixing bowl, add brown sugar, ground spice, whisk until well combined.Set aside.
    - Peel and core apples.Cut them into medium-thick slices.Add all sliced apples into the sugar+spice mix bowl, toss them together for even coating.
    - Set pan over medium heat, add butter to melt, add half of the portion of apple slices into the pan and cook then add another half of apples. Cook until apples are soft but still little crispy.Add grated lemon zest mix into it.Place strainer into the same mixing bowl to drain all liquid from cooked apples. Leave to cool.
    - Once apples fully drained and cooled, set apple aside, add a spoon of vanilla extract, corn starch, lemon juice into mixing bowl.Mix well until no lumps remain. Then return apples into the liquid mixture bowl, mix well for even coating. Refrigerate apples until ready to cook.
    - Roll the pie crust: take out and uncover the dough, let it sit for5-10minutes before you start rolling.Cut pie dough into two equal size. Wrap one half of dough into the cling film and shape the dough by slightly pressing and molding it with your hands into the flatten round. Place other half of dough into the refrigerator until you are ready to use. Dust flour on bench, flatten your dough by slightly pressing the edges which is easier to roll out the dough. Using rolling pin, roll out dough into round shape with same thickness. Roll dough 2” more from your pie dish size. Place dough gently on your pie dish with overhanging edges.Gently set the dough from bottom, sides. Tuck overhanging dough in the dish which gives even edge and pattern(trim off if pastry dough is overhanging).You can use your favorite designorcrimp edges, make scalloped design orfork pattern. Place lined pie crust in the freezer.
    - Preheat the oven at350F.
    - Add apple mixture into the pie dish and pack apples well.
    - For the lattice work: dust working surface with flour, roll your remaining half of pastry dough slightly larger than the pie dish, with pastry or pizza cutter make strips with two fingers distance or 1 inch apart. Start off lattice work by placing long strip in the center on top of the pie, put another strips till the end on right side with little distance.Further line up stripes to the end on the left sides. Rotate your pie to 90degrees then peel back every alternate strips(1,3,5)and place a long strip in the center.Continue with the alternate strips(2,4)to creating the lattice design (for arranging lattice strips design refer to the video). Once finished,tuck hanging dough behind the crust.
    - Cracked an egg to make an egg wash,apply egg wash on the edge of crust. Brush the lattice with eggwash.
    - Place pie dish on baking tray and bake for 60min at 350For180C.
    - Once cooked, let it cool and serve warm with cream or your favorite topping.
