    Welcome to my channel ‪@SpiceElementsinLife‬. Today I will share you a recipe which is one of the famous Karachi street food; Egg Shami Burger (aka:Street Style Anday Wala Bun Kabab). It is round kababs made with split bengal gram (Chana daal), infused with few desi spices and coated with whisked (foamy)eggs.This burger is filled with colorful veggies such as: cucumber, tomatoes, onion rings and coleslaw.     Shami Kabab Ingredients
    - Split bengal gram (Chana dal)1cup(soaked)
    - Water1 cup/asneeded
    - Turmeric powder1/4 tsp
    - Coriander powder1 tbsp
    - Cumin seeds 2 tsp
    - Gram masala 1 tsp
    - Red crushed chillies 1 tsp
    - Red chilli powder1/2 tsp
    - Black pepper powder1/2 tsp
    - Clove powder1/4 tsp
    - Salt 1 tsp or totaste
    - Cinnamon stick1 no.
    - Black cardamom2 nos.
    - Water for soaking as needed
    - Garlic cloves4-5nos.
    - Green chopped chillies3 nos.
    - Round red chillies6-8 nos.
    - Fresh chopped cilantro handful bunch
    - Fresh mint2tbsp or few leaves
    Foamy Egg mixture Ingredients:
    - Eggs4nos.
    - Salt totaste
    ============
    Green Chutney
    - Yogurt1cup
    - Green chopped chillies2-3nos.
    - Fresh mint leaves1/4cup
    - Fresh chopped cilantro1cup
    - Salt to taste
    - Cumin seeds1tsp
    =============
    Coleslaw Ingredients:
    - Mayonnaise 1/2 cup
    - Milk2-3tbsp
    - Powder sugar1tbsp
    - Salt apinch
    - Crushed black pepper1/2tsp
    - Shredded cabbage1cup
    - Shredded carrots1/4cup
    ================
    Assembling-Bun Kababs
    - Bun bread
    - Butter oroilas needed
    - Green chutney
    - Tomato ketchup
    - Sliced onions
    - Sliced tomatoes
    - Sliced cucumbers
    - Onion rings
    - Coleslaw
    - Chaat masala
    Directions:
    * Prepare Daal Kabab:
    - In a bowl add split bengal gram (Chana daal) and soak in water for 1-2 hours. Once soaked, drain daal water with sieve (use the water during daal blending).Set sauce pan on medium heat, add soaked Chana daal with all Kabab seasonings: turmeric powder, cumin seeds, coriander powder, gram masala, clove powder, red chili powder, red crushed chillies, black pepper powder, salt, cinnamon stick, black cardamom, garlic cloves, green chillies.Add water and bring daal to boil then cover & cook on low heat until daal becomes tender and water is reduced.
    - Once daal cooked, remove cinnamon stick, black cardamoms and discard them. Let daal mixture cool down in a mixing bowl.
    - In a food processor, add daal mixture, fresh cilantro, mint leaves, rice flour and blend it.Add daal water if needed. Form kababs with the blended mixture by slightly wet hands and shape them into equal size of round kababs.Set aside.
    * Green Chutney:
    - In a blender add yogurt, chopped cilantro, mint leaves, chopped chillies, cumin seeds, salt, lime juice and blend it. Greenchutney is ready.
    * Coleslaw:
    - Mix shredded cabbage, carrots, mayonnaise, crushed black pepper,dash of salt, sugar,milk in abowl. Coleslaw is ready, setaside.
    * Prepare Veggies for Burger:
    - Cut tomatoes and cucumber into thin slices; chop onion into thin rings and separate them. Set allveggies asidefor later use.
    * Prepare Foamy Egg Mixture:
    - In a large mixing bowl, add eggs (add salt as per your preference) and whisk well until it’sfoamy.
    * Assembling Bun Kabab:
    - Set tawa pan or griddle on medium heat. Add oil or butter,followed by whisked egg, place Kabab on egg foam. Add egg foam again to cover top side of Kabab. Let it cook from both sides until golden brown. Repeat same steps with each kabab and set aside.
    - Clean tawa or griddle pan, add butter, let butter melt then add bun bread and toast from one side first (skin side up). Lower the heat, again add butter, flip the bun bread (skin side down), spread green chutney on one side of bun bread then tomato ketchup on the another side. Add coleslaw on green chutney then assemble with sliced cucumbers and tomatoes. Place onion rings on top. Sprinkle chaat masala then add daal kababs (in halves). Place tomato ketchup bun bread on top and lightly toast it on both the side gently. Anda Shami burger 🍔 is ready!
    - Cut Shami burger into halves and serve hot with green chutney and tomato ketchup,Enjoy!
    - Yields: 8-10 kababs
