Wild Fermented Elderflower Mead - Making Mead Like a Viking!
In this video I am making mead like the Vikings did back in the day - without the addition of yeast from a bag. All the yeast that fermented the honey came from the ingredients used: the elderflowers, ginger bug and the wildflower honey itself. It’s super easy to make as well and the result smells and tastes awesome. Just combine all the ingredients with enough water, stir it and let it sit until for a few months until it doesn’t bubble anymore. There is some more nuance to it of course, so please watch and enjoy this video for all the insights on how to make your first batch of wild fermented elderflower mead like I did.
The recipe can be found here: www.tonyneedshobbies.com/recipes/beer-and-wine-making/wild-fermented-elderflower-mead/
If you need a recipe for ginger bug, I made a short video about that as well: th-cam.com/video/N-M3W-YVPlQ/w-d-xo.htmlsi=Qx1GG5CiitE3Vj7L

Repairing a Big Vise by Making a Spring (60 lbs, 7 inch jaws)

Recently I’ve acquired a very large vise that I am planning on using for blacksmithing projects. The vise was very cheap but there is one thing wrong with it: it doesn’t open. In this video I’m figuring out what’s wrong with this engineering vise. Then I am going to fix it by replacing the part that wasn’t there. I’ll do some spring making and make a lot of mistakes. If you have a broken vise, ...

    Delightful video, Tony. Technically, the key nutrient that yeast need is missing from honey and that is Nitrogen. Sadly, raisins have virtually none - even those who make wine from grapes and typically, we use about 15 lbs (about 7 kg) of grapes for every gallon of wine we still need to add nutrients. As you note, indigenous yeast is not usually as robust as lab cultured yeasts and so wines made with "wild" yeast may not ferment as fully, so you are left with a sweeter rather than a more dry wine.. BUT not all indigenous yeast are equal and the flavors that they can produce may not always be to OUR satisfaction. In my (limited) experience, when I use indigenous yeast in my wine making (fruits, flowers, vegetables or honey, about 1 in 4 batches are good to drink. So, if you have found a colony of yeast you like, I would harvest that colony and reuse it as your own special yeast colony. BUT be aware that while a colony of yeast may work well for you once, the make up of that colony may change over time and you may find that the kinds of yeast that were dominant in one batch are no longer as dominant in subsequent batches and so the flavors and aromas of your wines and mead change... and not always in ways you prefer.

    In Romania, Socată is a drink that is typically a tea, but can be let ferment. I would make it every year with my father. If you rack into beer bottles or swing top so it will handle carbonation. This low abv is a refreshing for Summer.

    great idea!! and thanks for providing plans! I would also like to know about the tool racks on the walls above your bench. I have never seen anything like it and it looks very ideal! I would like some and hope I can find them locally! What is the name, and who is the mfg.? Do you like them? Have you found any negatives about them? What do you use to attach your tools to the 'panels'? Also, about the portable, foldable, work bench you use outside, I have one similar, and I need bench dogs for mine, and I like the ones on yours, and I would like to learn from you, who makes those bench dogs, and can I order some? thank you!

      Hello again, The tool racks are from a German manufacturer called Küpper. They also produce all the holders that you can easily click into the racks. It is ideal! Whenever you need to reorganize, just take the holders out and place them somewhere else. If you happen to live in Europe you can easily order it online... The workbench is a cheap Black&Decker workmate knock-off and comes with the dogs... The brand is called Parkside and it is sold at Lidl - which happens to be a grocery store 😂 again, easily accesible in Europe. Where are you from? Cheers, Tony!

    Hi Tony. I have two questions if you can spare the time. Why do you add the spacers between the rod and the file? Do these present a vulnerability to them tilting over and collapsing under the force of filling?

    • @TonyNeedsHobbies
      @TonyNeedsHobbies หลายเดือนก่อน

      Hi Lemmingski, Thanks for watching my video and the question you ask. Here's my answer: I add those wooden spacers so that I can clamp the file more securely to the rod and to make sure it is parallel to it. I guess it's not strictly required. If you tighten the hose clamps really well, it doesn't tilt or collapse under the force of filing. I actually think it holds better with these little wooden spacers. Greetings, Tony!

    Hi Tony 3:16 ..... I am wondering if you could make a video which explains the different thickness of leather and possibly demonstrate mystery braids on different thicknesses. And also, I would like to know how each weight corresponds to a thickness. For example (Xmm) thick leather is equal to (X ounces) leather..... Also, when you use different thicknesses of leather, the mystery braid bracelet looks very very different ! I used some 1/16" leather and the mystery braid could have many completed series. The 1/4" thick leather is very stiff and hard to bend for braiding but looks tough and masculine when finished. Also, please explain how using different widths impacts the overall look of the braid! (and the ease of braiding). thank you, susanspad SB

    • @TonyNeedsHobbies

      Hi Rspaulding, from what I understand the smack pack has enough nutrient for kick starting the yeast in the pack, but not enough to efficiently multiply the amount of yeast a couple of times to ferment a large batch of higher gravity wort. Whenever I create a large starter I add nutrient and malt extract in order to put the yeast in the most ideal situation (with the limited gear I own 😉) and this has worked for me quite a few times already. Hope this helps! Cheers and Happy Brewing! Tony

      Hi Dwight, Thank you, I totally agree. They are much more comfortable around the heel using the custom insert that I designed for these shoes. Good job. When heat treating high carbon steel, it is usually best to heat the metal till a magnet wont stick to it, then quench in canola oil (heat treating is very complex but for a diy/home job this method works pretty well). Straight after quenching, temper for 2 x 1hrs cooling inbetween at 300-400 celcius higher the temperature the more flexibility it will have. Don't drop or hit or flex before tempering. Maybe you can get some help from a friend with some powertools? This project isn't too hard but indeed requires a bit of woodworking experience. Alternative you can buy mold/cutter combos these days - but I like to make my own tools 😀 Thank you for watching my video - hope you liked it! Cheers, Tony

    Is the end result sweet?

      @TonyNeedsHobbies 4 หลายเดือนก่อน

      Yes, kind of - and it has a great tang to it. It all depends on the amount of sugar and ginger that you use. Experimenting helps a lot to figure out what you like. Give it a go 😊

      I more or less made up the dimensions as I went so didn't document it very well. Below some estimated measurements: Handle: ~40*50*200mm --> hole: 55*30mm all the way through and handle shaped to fit my hand comfortably Adjustable cutter parts ~10*25*200mm (2 pieces) Hope this helps!

    I did indeed enjoy! My wife makes cheese and she has made Gouda before and it was delicious. I was fortunate enough to spend two months in the Netherlands back in the late seventies. I probably ate my weight in Gouda cheese while I was there. Well done!

      Hi Robert, That's great to hear! In what town did you stay and do you remember any Dutch? Groetjes, Tony

      @@TonyNeedsHobbies I was at Soesterberg Air Base. I spent a lot of time in Zeist. I was in the US Air Force at the time. I was able to see a lot of the country and some really cool places. I found the Dutch people to be very warm and welcoming, especially the older people. Amsterdam was like nothing I’d ever experienced before. I probably literally ate my own weight in Gouda cheese. My favorite place was Volendam. It was the most picturesque place I’ve ever seen in my life. So many great memories. Thank you for your reply. Kind regards, Robert in Alabama. P.S. Sadly I don’t remember any Dutch. One fond memory was in a pub in Zeist drinking a few beers and the bar tender was playing a Bobby Vinton album. Every time a new song came on all the older Dutch men would turn to us and sing the first few words. They also kept buying us beer until we were well lubricated. The memories keep getting better with age. Take and happy cheese making to you!

      @robertlassiter907 That's so cool! I've always wanted to become a fighter pilot in the Royal Netherlands Air Force but after going through selections twice I didn't make the cut. At the time they did a large part of selections in Soesterberg so I've been there quite a few times. These days the base is decommissioned. They build a great air force museum on the location and you can do really nice nature walks on the old base. We're you flying yourself or supporting? Cheers!

      @@TonyNeedsHobbies I was an aircraft electrician. At the time I was working on F-15’s but later I worked on F-16’s. I did get to fly in a F-16 while based in Korea. We also toured the Fokker factory where they were making the center section of the F-16.

      Amazing! Great to hear you got to fly in an F-16. And the Fokker factory tour sounds awesome. I've only found out last week that Fokker was licensed to build F-16s. What a coincidence 🙂 Cheers!

    I think the mold which we make the soap and the cutter mold size should be equal.can you say something Dear?

      @TonyNeedsHobbies 4 หลายเดือนก่อน

      Thanks for waching the video and your comment. I'm not exactly sure what you mean, but indeed, if the other molds you use and the cutter mold combo are the same size, you can use the cutter for all the other molds as well. Just take the solidified soap out of the regular molds and transfer it to the cutter mold combo to use it to cut the block into bars. Hope this helps you. Tony
