desired texture is subjective. most people i know want fall off the bone "mushy" style vs bite off the bone. So i'd say just cook to preference. If it's 3-2-1 then do that. If it's not, then dont

Man I’m about to just get an old fashion stick burner the prices are too crazy for these things not to work properly
This "spread" is similar to the sauce in many other burger places and I find it to be absolutely disgusting! I always order burgers without this gross sauce.
I've had mine for 5 years now and use it regularly. There is a learning curve with it as with all grills. Problems I've had are the welded supports on the bottom of the cook top cracked and my cook top is warping so its no longer flat and the oil/grease pools in the middle.
I was surprised with your experience with temp fluctuations. I was actually impressed with how well it maintained temp (according to my calibrated Meater wireless temp sensor). Thanks for the video.

Thanks for the video. I'm considering buying a Pellet Grill and have the options to go for a Treager Pro 575 or the Nexgrill Oakford 790. What would you recommend if the size isn't an option?
3 hours at 250-275 in oven upside down in glass pan with butter and vinegar. Season with salt, pepper & garlic. Finish on grill 10-15 minutes. Sauce if desired.
FYI- if you wear glasses, you might think about buying one. All the grease, oil, butter and steam rises to your face, your glasses. From my world they aren’t worth it. Just an fyi before you buy, I will stick to grilling.

Sliced into the juice this becomes the best piece you’ll ever eat. That char is money bite, trust and believe.
I think a lot of the heat issues (surface differences and displacing out of the sides) were fixed with the new omnivore top.

I did this yesterday and they came out amazing! I used hot honey in the wrap to give it a little kick. The meat had a ton of flavor and pulled completely off the bone with minimal effort. Much better consistency than the mushy 3-2-1 method.

The specs say enamel coated cast iron grates. Are they? They look like plain, preseason cast iron. And just so you know, there is no link for best thermometer in the notes.
