Miss canning. But having orthopedic bone problems no longer visible. You rock.
Almost all my jars were empty and my freezers were full. We're about to get a whole cow and 50lbs of venison sausage so I've been emptying the freezer,canning meat, bone broth, leftover Thanksgiving turkey soup, beans... feels so good having tons of quick meal ingredients precooked!
My next couple videos are all freezer clean out canning projects. 😊 We are also getting our bulk beef so making room is a must. I also would rather have ready made stuff on my pantry shelf versus in my freezer.
love the video!!! question... we are surrounded by farmland... is it still ok to do a garden in your opinion or should I be worries about chemicals?
I am surrounded (on almost all sides of my property) by huge farmlands. Unfortunately they spray and they spray ALOT (they sometimes even spray by crop planes 😩). But I still garden. I still think that my homegrown stuff is healthier than what I can get at the store. I control what I grow it in and directly put on it. One way I’ve kinda protected our property a bit is we have let trees grow along the property line to help as a buffer for some of the chemicals. It’s so sad today that being surrounded by farmland is a bad thing.

It is a champagne bubbles cherry tomato. I got the seeds from MI Gardener. It is my favorite cherry tomato.

I believe what you made is pronounced zhar-din-air. The green peppers you put in are definitely not jalapeños, they look like small poblanos(pronounced po-blah-noes) to me. Jalapeños are more smooth, slender and have a thicker, firmer flesh. Poblanos are more flexible. Thanks for sharing this! It would make a fun addition to Christmas baskets. Have you seen a steam canner? I think you would love to use one instead of a water bath canner.
I have heard of them, but never tried one. They look awesome, they use hardly any water. It’s on my long wish list lol 😂

The veg in a jar looks really good. I love pickled carrots and cauliflower so your mix is my ideal and I really want to do it.
sugar is for flavor too the vinegar is what you dont wanna play with in this sort of recipe
Good to know. Maybe next batch I’ll use honey and make a refrigerator mix to try it.
I can my broth too. 1. In case of freezer failure. 2. It's easy 3. It tastes so much better than store bought. I'm canning turkey broth right now.

I love this giardiniera (hard to say, harder to spell). I have used the recipe in the Ballot Canning book. Delicious.
I have made that recipe and it’s very good. I played around with the veggies tho.
I don't even know if there is a right way to say it, but I've always said jar-den-nay. I think it's like worcheshire or however you spell it, everyone says it different. It's all relative to me 😆, i still know what you're talking about. I love gardener, i always have it's just so good 💙💙

What is the largest size you can safely can stock or broth in? I did quarts but yours look like half gallon jars? Is that safe? If so I’m stoked.
Mine are all quarts. I I have no idea if it’s safe to can larger than quarts. 😬

i just bought an all american 30 qt canner and started canning all the tuna i catch. i always vacuum seal it but it takes up so much freezer space, which is why i decided to start canning. i'd like to start canning other stuff as well, but i have to ask, when it comes to huge amounts of stuff like broth and tomato sauce isn't it easy enough to just go to the store and buy it as you need it? why the need for a gazillion jars of it? i'm just trying to find a logical reason to can those sorts of things. it doesn't sound like you're a prepper, so please help me understand the reasoning. thanks!
I have a garden and I preserve all of my tomatoes when they are fresh from the garden into tomato sauce. I have zero freezer space to put frozen tomatoes. For the broth I make huge batches at a time when we butcher our chickens or buy our beef from a farmer. And again zero space in the freezer. Also Making broth from scratch literally cost zero dollars and I HATE going to the grocery store because it’s so expensive. 😊

For me, my 6 ft harage freezer is always stuffed to the max with yellowfin and bluefin tuna and i dont have room for anything else. Im unable to eat it fast enough in order to clear it out by the time tuna season starts again, so i end up throwing some out every year, which i hate doing. Several of my friends can their tuna and so now i am. Why didnt i start canning sooner? Happy canning!

We just got a smoker this past weekend. I usually like to put butter under my chicken skin for roasting. Does is not all run out in the smoker with the chicken spatch-cocked? I skipped it last night just in case. Was still delicious!
I have to have my hair up in the kitchen too! I don't see how people can cook with their hair down or in long sleeves! Of course I'm short so my sleeves are always wayyyy too long 😅

I totally agree with u on keeping canned broth in the pantry. I never buy broth anymore and there’s mostly garbage in the store bought cartons. Not to mention the $$ saved!

Love to watch how others use their canned products. I need to can some more potatoes as I need to have some quick food on hand without relying on tasteless TV dinners. I wonder if illness is more common due to not using herbs and spices as much in this grocery store with no home gardens generation. I think we are cheating ourselves - I know we are if you just count taste.
I kicked myself for making this assumption but because of your “northern” accent, I never would’ve thought you lived in Kentucky😂. I’ve been gardening & canning over 20 years and many still are confused why I do it, especially when we’re empty nesters. The reasons I still do it is because a lot of commercially processed food is garbage and when my kids’ come visit, they’ll ask me to cook their favorite meal. I will be doing this until I physically can’t.🤞🏼🤞🏼
I make my potato soup very similar, except no cayenne and i add small pieces of leftover baked ham that I keep in the freezer instead of the chicken. So good.

I live in WV and my mom said to in the day my great grandmother would dig a hole close to the house and fill it with straw put her potatoes in it them cover the top with more straw them dirt and that's how they kept their potatoes. Idk if this helps, I'm planning on trying it next year cuz I'm like you i have nowhere to store them may God bless 💙💙

I’ve heard of people digging a big hole and putting an old non working refrigerator or freezer in it to store root vegetables in the winter.
