Ive just started canning. I have kept a large pantry for a few years now. But wanted to start canning my own sauces and things. Ive done Chicken broth, bleack beans and chili so far. Today im doing cranberry sauce. Waiting for tomatoes from Azure to can my own spaghetti sauce and crushed tomatoes, maybe diced tomators if I have enough. I have been having fun! I think we will go apple picking this weekend and can apple pie filling
This was an inspiration video for me. I am in New Zealand in the Southern Hemisphere so apple season is in June-August so I’ll save this vid for next year to can. I’ll try your simple syrup recipe for the upcoming peach season though! 😊
I'm with you on the potatoes. With canned, you can not do mashed potatoes. I've always ended up with paste. 😂😂 I did pie filling for the first time this year, and I learned the same lesson on head space---definitely leaving more the next time. Sticky mess for sure. Thank you for sharing.

If your counter top canner does low pressure canning you can use that instead of the water bath.
You need one of the gadgets that peels, cores and slices the apples. We use ours soo much. They're inexpensive. You can get suction cup or clamp on.

I heard if you add some Powdered inatant potatoes to your canned mash potatoes it makes it less gloopy
