Fast Delicious Air Fryer Chicken Parm

  • I had some leftover Rao's marinara and decided to make chicken parm. I didn't have a lot of time and did not feel like frying - so the airfryer came to the rescue! This was about 90% as good as fried in oil and 200% easier, so a win.
    2 chicken breasts (about 1 pound)
    Mozzarella cheese (about 5 slices)
    1 cup marinara sauce
    Fresh parsley for garnish
    Spray oil
    For the chicken dredge:
    1/2 cup corn starch
    2 eggs
    2/3 cup fine plain bread crumbs
    1/3 cup ground parmesan cheese
    1 tsp italian seasoning
    1 tsp garlic powder
    1/2 tsp kosher salt
    1/4 tsp black pepper
    Slice the chicken breasts in half in order to thin them out, and remove the tender if present. Dredge first in the cornstarch, then egg, then breadcrumb mixture, pressing to ensure the crumbs adhere.
    Lightly spray with oil and air fry for approximately 12 minutes, depending on your air fryer - flipping once. When slightly brown top with 2 tablespoons of marinara sauce and one slice of cheese, and air fry for an additional 2-3 minutes until cheese is brown and bubbly. Garnish with chopped parsley and serve.
