Yogurt is fermented milk. Two steps to make homemade yogurt: 1. Heat the milk; 2. Add in the starter culture and incubate. The yogurt can be stored in the fridge for up to 2 weeks.

*at 104~113F, ferment for 6~8 hours
at 86F, up to 18 hours

    For the same amount of solution, can I add more eggs instead of 12? I wanted to make large batch for families and tripled the solution following the same ratio but it didn’t work. Maybe too strong? The egg yolks were formed but not the egg whites. Any help would be appreciated.

    this recipe is much harder than it looks on video. very sensitive to temperature and egg size. i highly recommend in the first try take some extra eggs to check one every day after initial week. it is very important to not overdo them. (they are screwed easily)

    Which one is better at making tofu? gypsum or nigari? I have been told that gypsum is better because it brings out the sweetness of the soybeans whereas nigari is very bitter.

    thank you for this. we have this in our house, and been getting warning light about it not draining. took it apart like this and cleaned it all out, lots of calcium scale and mung. cleaned it all out, used a shop vac that sucked all the mung out, wasnt hard to do. i will never buy another dishwasher that doesnt have a removable filter. this is not a good design for long term.

      I use calcium sulphate. 1.3kg bean, soak in water 3hours. Spin using machine 7times...each spin use 2litre water. Cook soymilk to boil. Mix 30g calcium sulphate with a cup of water. Pour the calcium sulphate into a thermos and immediately pour the hot soymilk into the thermos. It's good to pull while pouring the hot soymilk as high as you can. Close the thermos using styrofoam. Put something hard like plywood or tile onto the styrofoam and put a bucket full of water to compress the styrofoam...so that you get an airtight thermos. You will amaze how beautiful your taufufa/silk tofu.If you don't want to use my technic just use GDL. You can easily get beautiful taufufa but GDL cost money a lot.

I got 50pcs tofu that size...2.75inx2.75in. The less U use cs the more jelly like ur taufufa. Too much cs will destroy the soymilk. Too jelly will make the press work so hard and sometimes the tofu will stick to the cloth. Try and error as I did haha 😂

      it can be any egg but here is a catch - recipe in video is for duck eggs. basically all you do is saturating an egg with Na+ ions. that's all. so the process depends on egg size. chicken eggs smaller than duck ones so they need less time in solution.

    If you're like me and came to rhis video hoping to figure out how to remove the very last screw (the one on the moving wheel/disc) it turns iut it's reverse threaded and easy to strip. I got it off by holding the wheel with one hand so it wouldn't spin and then carefully but forcefully using a hand screwdriver turned the screw clockwise (like you'd normally tighten a screw)

    I have been doing this for years. for 1 lt water 50 g salt and 50 g caustic soda. Here in the tropics it is too warm to leave at room temp so I discovered that 13 day in the fridge makes beautiful golden eggs. I then wrap each in cling wrap for another 10 days or so. It works for me.

      @@funkidz88 Here in Guadalajara, México ( 1,500 mts altitude) it is always a bit warm in spite of the altitude so I use the fridge. The taste seems to be a bit like aged French cheese which I think is absolutely delicious. I eat them with a bit of grated ginger and drops of soy sauce. When I have done it at room temperature I always had many failures.

      Press it for 30 mins. Using the nigari or gypsum. It must be 12 hours pressed if using gdl

After 3 months, brand new, chucking it for a $1000 Bosch with easy-to -remove screen/filter. And no.prewash. Anyone want this 3 month old Samsung? In Philly.

      I think you’ll find you’ve probably not tried a decent enough preserved egg. A lot of the ones you can get at the store are cheaply made with chemicals that allow them to rapidly complete the preservation process but which will increase the iodine content so that they’re so stinky they are practically inedible. Contrary to what a lot of ppl out there are saying, a high quality preserved egg should actually taste very mild, a lot like normal eggs but just without that sickly sulphur smell you would get in a boiled egg. Like a lot of others, I actually prefer century eggs to regular eggs if they’re good quality. They have an odd smell, but that sulphur taste that eggs come with is totally gone!

      It's a great way to preserve eggs for a long time I don't see why it wouldn't exist
