Preserving vegetables through lacto-fermentation
#lactofermentation #organicgardening #foodpreservation
In this video, I am lacto-fermenting three different batches of vegetables and showing you how to do it yourself at home. Fermentation is a natural process that has been practiced since ancient times to preserve food. It allowed our ancestors to extend the freshness of grains, vegetables, and milk. But the real magic of fermentation is that it’s the only preservation method that actually makes foods healthier instead of degrading their nutritional value. Join me in this video to learn more about this practice, and how to ferment your own vegetables at home. Enjoy!

    I use the (9B here) Florida Vegetable Gardening Guide from the University of Florida. It tells what and when. Biggest deal here is the season, but you can grow, relatively pest/disease free from Oct-April/May. Leaf type lettuce and Romaine does well in an elevated salad table and if you work a day job away from home, drip irrigation will make it more foolproof. Big tomatoes are a challenge if growing indeterminate types. That is, unless you get accustomed to eating fried green, or pickled green tomatoes in the event the plants try to get problems when they happen to be loaded with large fruit. I use self watering containers with automatic float valves and grow them single stem, which is so much easier to manage. Sweet potatoes and yams do very well here. If all else fails, these have high nutritional value and are pretty much self perpetuating, if not invasive. Pole beans, and other nitrogen fixing legumes (pigeon peas) are a pretty sure bet too. Container gardening is where it's at if you can't build a large enough compost operation. The potting mix can be reused for many grows, and it too, will eventually turn to compost for amending the sandy soil as well. If using perlite, just float it out of the potting mix, gather with a tiny fish net and reuse it as well so it isn't littering your garden beds. Live Oak leaves make the best mulch because they take a long time to break down. Regardless, it takes 5 years to get garden plot conditioned to where it needs less amending each season and that's about how long it takes to get oak leaf mulch to make a thick enough humus layer and a healthy worm population. I layer those leaves 6-8" thick. It's better than wood chips by far. With the leaves, there will often be bits of ramial wood that is a better ratio of wood to leaf. If you keep the leaves built up, the organic matter will not leach out like just adding compost does. There will be leaf mold and other beneficial microbes. Use oak leaves for mulching your containers as well. I use no less than 3" in say, a 5 gallon planter or bucket. Consequently, none of my leaf mulch beds have much in the way of pests, either. At that thickness, it reduces irrigation demands tremendously, even during heat and drought.

    How . much sugar should yoy add?

    • @freedomgrows
      @freedomgrows 8 วันที่ผ่านมา

      Depends on the fruit you use and the size bottles you have. I was using wild blueberries here. They aren't as sweet as farmed blueberries, so I added approx 1 teaspoon of sugar to each of my 12oz bottles. For 16oz bottles, I'd do 1.5 tsp. When I use fruit with a higher sugar content, I won't add sugar because the fruit usually has enough. This isn't a strict rule to follow though.

    Do you have to burp the bottles?

    • @freedomgrows
      @freedomgrows 10 วันที่ผ่านมา

      If you leave them out for 1-2 days, and then refrigerate them, they shouldn't need to be burped. Anything longer than that, you may want to. This also depends on what you flavor it with, and the temp in your home. When I use berries in mine, especially straweberries and blackberries, it ferments quicker. It's always done in 1 day. I live in Florida though, where it's almost always hot.

    my second fermentation was done with crushed apples and they're some white spots on top of the apples after 5 days and it smells a bit funny (no fiz as well- my bottle was 2L large)- is it still safe to consume?

    • @freedomgrows
      @freedomgrows 15 วันที่ผ่านมา

      It's difficult to tell without photos, but no fizz after 5 days doesn't seem right. How much apple did you put in that bottle? I'm wondering if there wasn't enough sugar for the bacteria to consume. Also, was the top on the bottle airtight? Are the white spots fuzzy? Is it cold where you live? Those are all factors. It should smell tangy, almost like vinegar, but not putrid, moldy or rotten.

    • @freedomgrows

      If your papaya fruit came from a different country, it may have been sprayed to preserve it longer, and if that's the case, the seeds likely won't germinate. Can you try finding local papaya? I scrape the seeds out of the friut and plant them directly in soil with some of the fruit's flesh and a bit of compost. No waiting for the seeds to dry out first. Hope it works out for you soon!

If you use store bought juice, the likelihood of a second scoby forming goes down. Now that I think about it, I sometimes do get another baby scoby in my bottles when I flavor them with certain fresh fruits (blended up). Either way, it's not always preventable because it's a natural byproduct of the fermentation process. You can always strain it before serving though.

      @Homesteading_heathen yikes, that's a long time! It definitely depends on the county. I know Marion County is pretty quick with things, but Orange County is ridiculously slow. Seems like Hernando is in the same boat. Hope things turn around for you soon!

    This is one of the most comprehensive yet consolidated tutorials on henna and indigo I’ve seen. Thank you for simplifying it and also hitting the main points, as well as the science behind why both are needed and how the color will continue to set (oxidize). The result is great on you and I’m encouraged to try it. I bet a good drain catcher is important for the bath tub, I did henna only (years ago before grays) and remember that part. Maybe on a hot summer day I can hose most of it off. 😂

    You don’t “need” to get the permit for wells and septic. Money talks. Just hire someone if you want off grid without the need for a home. Be sure to get soil test. Get half acre or bigger if doing this strategy. Otherwise 10ksqft is good if building a sfh. I use landid/mapright to investigate land if in flood zones etc. yes always use title company never do it yourself. Yes get survey always.

    Why are you planting full grown shallots? For seed?

    • @freedomgrows
      @freedomgrows 4 หลายเดือนก่อน

      I took the cluster of shallots apart and planted the individual bulbs in that cluster. When planted, each bulb forms a whole new cluster of shallots. They're similar to garlic; one garlic clove planted will produce a whole head of garlic.

      @Who_diss811 next time you're at the grocery store, grab some shallots and try planting them this way. Or.. save one bulb from each of your clusters once you harvest them. Then, plant the bulbs the way I showed in this video. That way you can keep multiplying your harvests :)

    Hey Update on the pineapple pups I picked. They really weren't growing a whole lot. One of them ended up dying. Three more started turning brown on some leaves (they might've gotten too much sun?) but two of them are still going strong, despite the soil forming mold for a bit and I had to completely replace it (which might've also had to do with the poor quality of the other four) but they still haven't grown much since I potted them. I had another question though: I picked two more pups from another pineapple plant my family was growing. They're more the size of the ones you're showing here, but I accidentally tore off a bit of the base. Some of the bottom leaves came off. Is that bad?

    • @freedomgrows
      @freedomgrows 4 หลายเดือนก่อน

      Hi! Thanks for the update. Sorry about the ones that died. Browning of the leaves could've meant too much sun, not enough water, and/or they were probably too young or small. I'm glad to hear a couple are still going strong, though! The leaves that tore off at the bottom of the new ones shouldn't affect their growth, but I'd just keep an eye out.
