How much is a "sushi grade" fish in the market these days? Dang that course must be good, but the price value for me is out 😅

Wonderful presentation and great looking dishes. I have to question why they do the full break down of the fish in front of the customer though. You still need to process the fish since most fish needs some kind of shiojime(salt curing) to draw out excess moisture. The good thing is they have a lot of non nigiri appetizers that are pre-prepared which you can enjoy while they get the other fish ready for nigiri. I still feel that is something a chef should do before service though.
