Thanks for the review! I'll definitely be using your video as a potential list of restaurants to visit in BKK. Specifically, I'm curious about Nikaku. Do you remember which course did you order? Since it's from Kitakyushu, did you notice any differences in terms of ingredients and style?
Hi 😊 for Nikaku I went when they first opened and had only 1 type of course which is a 20-course for ฿7500 (around $205). I think their style is very traditional, no modern twist at all compared to other places I’ve been to. They produce their own in-house vinegar for the sushi rice, so that was quite special. The rice was delicious and they don’t use sugar in their rice. The ingredients are slightly different from Tokyo style as they incorporate many local Kitakyushu ingredients so that was quite interesting. The place is definitely worth a detour if you’re looking for some high quality Omakase. I hope this helps and thank you so much for watching! 😊🥰

hi miss FA, I'm writing from Italy, I used automatic translator for English, if your videos are beautiful I download them and watch them again on the big screen, I really liked the videos with chef MIZUNO, then IZAKI with the presence of beautiful humble women with beautiful clothes, and TOMO SASADA with beautiful women who serve very humble who create ornament and beauty, some chefs are charismatic and it is engaging to see them preparing sushi. I wanted to know what the purpose of those continuous brush strokes of liquid they put on the sushi at the end is, and what does it taste like, and if they don't put brush strokes of liquid it doesn't taste like anything? the presence of women around the chef is much better than seeing only men.
Hi 😊 thank you for your comment. I’m so glad you found my videos useful and enjoy them! There’s many elements that make a restaurant visit interesting, and the people in the video and the vibes of the restaurant definitely add some charm to it. The sauce that the Chef put on the fish at the end with a brush is called Shoyu, a kind of soy sauce. It adds saltiness and subtle sweetness to the fish, or also called the “Umami” flavours. Not everything needs Shoyu, without Shoyu it can still taste delicious, but Shoyu is used to enhance the flavours of some ingredients. I hope this helps and thank you so much for watching! 😊🙏🏻

Perhaps an observation,,, since lamb is a darker meat compare to beef, naturally, it would look or will be darker as medium rare than beef,,, no!!! just an observation or do you agree or not!!??

How’s that Fukushima air and water treating you
Omakase chef here, iwashi bones are very very small and you are often doing many at a time which a very delicate. Its not uncommon to leave them in especially if pickling them similar to kohada and kisu. Ive both removed and left them in it depends highly on the labor budget of a place, and their volume.

I always appreciate when I don’t feel any bones in these tricky fish. I don’t mind a little bit of the bones, but there was a rare occasion that the bones made my throat feel a little uncomfortable. Hi 😊 thanks for your comment. I think you mean the booking fee? The 2000 yen charge should be the processing fee paid to the website use to make reservations. It’s separated from the restaurant. Unfortunately that’s how it works with reservation websites in Japan 🥺
