How can you tell if the certification relates to the meat that they show you ?
That’s a great question. You can slightly tell from the quality of the beef they serve when you eat it, but of course, you can never tell for sure. You’ll have to trust the Chef for this. This is a well-established restaurant with good standards of practice and many awards received. I personally don’t think they’ll want to risk their high and rising reputation just to save some money by serving beef that’s not certified. I hope this helps. Thanks for watching! 😊

@@MultiCkleeI think in Japan it’s common practice for restaurants that serve real wagyu to show the certificate. When I had a wagyu set dinner in Osaka they showed me the certificate too.
@@deekay13 Understood. I'm just wondering what is the purpose if the cert can't be objectively associated with the meat, other than taking it in good faith that the restaurant is honest.
@@MultiCklee WDYM? The cert indicates that the wagyu is legit cuz it’s nationally certified. No cert = not real wagyu. Real wagyu comes with the cert.

I guess shirako is an acquired taste. I am not fond of it, though I'd obviously eat it to be polite if served at a meal like this.
Shirako is my favourite 😊 although I can easily understand that not everyone will like it. It can feel a bit yucky and fishy if not cooked correctly 😅 Actually you can let the restaurant know in advanced when you make reservations if you have any food dislikes and they’ll change it for something else.
