Aam Ka Achar Recipe
Recipe In English:
Ingredients:
Keri (Raw Mango) 500 grams
Namak (Salt) 2 tbsp
Haldi Powder (Turmeric Powder) 1 tbsp
Methi (Fenugreek Seeds) 1 tsp
Sabut Dhania (Coriander seeds) 2 tbsp
Safaid Zeera (White cumin) 2 tbsp
Soanf (Fennel Seeds) 2 tbsp
Ajwain (Carom Seeds) 1 tsp
Rai (Mustard Seeds) 1 tsp
Kalonji (Black Seeds) 1 tsp
Kuti Lal Mirch (Red chili flakes) 1 tbsp
Lal Mirch Powder (Red chili powder) 1tbsp
Sarson Ka Tail (Mustard oil) 1 cup
Namak (Salt) 1 tsp
Procedure:
- Cut raw mango and clean it with a cloth or a tissue then fill it in an air-tight container.
- Add salt and turmeric powder then cover the lid and shake it well.
- Cover it with a muslin cloth.
- Put it under sunlight for 6 - 7 days and shake it occasionally.
- Raw mango has tenderized after 7 days.
- Now to prepare masala for the pickle.
- Roast fenugreek seeds in a frying pan and mix it well.
- Add coriander seeds, cumin seeds, fennel seeds, carom seeds, and mustard seeds and roast them on medium heat until it becomes fragrant and changes color.
- Set aside and allow it to cool.
- And grind it coarsely.
- Add black seeds, red chili flakes, red chili powder, and mustard oil.
- Mix it well.
- Add cooked raw mango to it.
- Discard the excess water.
- Add salt to it and mix it well.
- Cover it with the muslin cloth again.
- Put it under sunlight again for a week.
- Mango pickle is ready after 7 days.
- Can be stored in an air- tight container for up to 6 months.
Mango Pickle is ready to serve.
