    Is is possible to let the dough proof on the counter for 6 hours and then bake it instead of putting it in the fridge for 12 and baking the next day?

      Hi there! Proofing in the fridge just gives more flexibility in timing. I usually don't have the time to do the whole process it all in one day. The coolness of the fridge slows the proofing giving me a more consistent schedule when I am making bread. The steps don't take that long individually so I can plan making bread into my day schedule easier. To answer, your question, yes you can let it proof on the counter. The amount of time would depend on your climate, therefore, I cannot say for certain the amount of time. I'm in southern Texas so its like baking in hell here -- always hot and very high humidity. Test the dough with the poke test - the einkorn flour should work about the same as other flours. You don't want it to spring back fast or not at all -- you want it to spring back slowly once you poke it. When trying new recipes, I have found that I use the basic recipes that I find once and then start adjusting for my schedule and my climate. Then be sure you write down what you have changed -- I also write down the weather outside to know if the time of year/temperature will be a cause for a little tweaking next time.     For grinding up feed for the chicks, I picked up a used coffee grinder from goodwill. Makes quick work for all that feed they will be going through. Congratulations on you hatch!

      The chicken run that we bought has metal plates for feet and the plates have holes pre-drilled in them. We screwed the metal base to the wood and it has held up very well. We just had a Cat 1 hurricane go right over us and the chicken run made it through unscathed.

      This all depends on the breed, but again you're starting to look for the tell tell signs around 18-20 weeks. When the comb fills out and he starts to crow you know he has hit puberty. If he mounts one of the ladies then you most likely have yourself a mature rooster. Well a rooster that can reproduce...do guys ever really mature?

    Currently learning as much as I can about vegetable gardening and food forests until I can move out of the city an onto my almost half acre in west Texas. Thank you for sharing your property and your way of maintaining your sources. Looks good! One thing I have learned is that the soil will get better over time with how you are doing it by adding woodchips, but if I could lend any useful advice I'd recommend having plants/roots growning in the parts that you're wanting soil improvement. The exudates from roots will supply the food for the beneficial microbes most gardeners are hoping for. In turn will more quickly convert dead soil to living soil 😊 Thanks again for adding value to us who seek information from homesteaders actually homesteading. Btw, you have a new subscriber 👍🏻

      Thank you for the sub!! I have a few plants that I'm getting established in the wood chips, but my soil was so bad that it needed almost a year to compost and create something that I even wanted to try growing in. Right now I've got some tomatillos that are popping and squash that is doing well. I did some broccoli that did so-so, and tried watermelon and it didn't root in at all. Always trying something new.

      I understand your concern about the vermin. The deep litter in the run shouldn’t be so thick with food scrapes that your chickens can’t eat it. Remember you’re going to be adding leaves, grass clippings, and garden waste. Very similar to an outside compost set up with your chickens doing all the turning and sorting for you. As with anything you will need to keep a close eye on your set up and see how it is working. If it starts to attract rodents then adjust. Good luck!

      I scrape mine out every few months. We add more shavings and First Saturday Lime (or you could use DE) to create more deep bedding and then we scrape is out and put int in the compost. Currently we only have two goats that are using that space and it works well.

    I've said it before and I'll say it again. The ONLY way I'm drinking raw milk is if I'm am personally a part of every single process of how that milk was made. Meaning i personally know the cow, i have taken care of said cow, i have fed the cow, i have milked the cow myself, and i know every single daily detail of what that cow has fin through since the day it was born. Any other possibility involves way to high of a potential to spread major life altering diseases like polio and tuberculosis.

    I don't really want to raise rabbits for meat....but.....I'm not eating bugs or fake bioengineered meat... so this is a very viable option for not having acres of property. My Great Granny and grandma did this for half their lives through the depression and past. it was just survival. they had stacks of notebooks they used to keep track of the lineages

    You guys have an amazing set up!! Planning and communication is key to make it easy for us and you guys did a great job on your part for us. We had two good rains and all of your planning paid off beautifully. Everybody and everything was clean and dry! There were so many neat ideas in place in your working systems! The watering systems were extremely helpful! Also, the structure of your fences and buildings were in superb working order so there were no safety issues as we worked around your sweet animals.     Just a quick question. It’s hard for me to tell on my phone, but are you just nailing the ends of first two flat foundation boards into the masonry blocks?

      Nothing is nailed directly to the blocks but because the wood is screwed together it hold everything together tightly.

      @@cedarporchhomestead Oh, I see there’s a bracket there that you’re using. I didn’t see it when I first watched it on my phone. It looked like like you were just nailing it into the end of the board and I couldn’t figure out why. Haha.
