Oatmeal Cranberry Cookies
Servings: 15 - 18
Ingredients:
2 ripe bananas, mashed
1/2 c. nut peanut butter powder
4 tbsp water
2 tsp cinnamon
1 tbsp chia seeds
2 tbsp. cacao powder (can use unsweetened cocoa powder)
1/4 c. maple syrup (or other sweetener of choice)
1/2 c. pumpkin seeds (or 1/4 c. chopped walnuts + 1/4 c. pumpkin seeds)
2/3 c. organic dried cranberries
2 c. sprouted rolled oats (gluten-free)
Directions:
1. In a bowl, add mashed banana, nut or seed butter, cinnamon, chia seeds and maple syrup. Stir until well-combined.
2. Add pumpkin seeds, cranberries and oats. Stir until well-combined.
3. Optional: place bowl in refrigerator for 10 minutes to firm up.
4. Scoop mixture onto parchment lined baking sheet.
5. Bake at 375°F for 10 - 12 minutes.
6. Optional: before baking, sprinkle with flaky salt

You can definitely omit the nuts and cinnamon. There are lots of other flavor combos. How about candied ginger and cranberries?

Not yet! But I’ll put it on my “to try” list.
I will not eat oatmeal cooked in a pot. The texture does not work for me. I will eat it toasted in granola and othe applications, just no like porridge.

I have a grapevine in my backyard. It doesn't really produce much grapes. But my rabbit loves the grape leaves.But i've been tempted to make stuffed grape leaves, but I haven't bitten the bullet yet.Maybe this next spring, when I get some fresh ones, I'll have to do it.

My favorite breakfast, which I have every single morning, is - 1 Dr Preager's California vegan burger, 1 Dave's Killer Bread hamburger bun, slice of onion, slice of tomato, dill pickles & French's mustard. .Since 2010 I have lost 155 lbs. The bulk of it came off, 85 lbs, in the last 13 months. I have been Starch Solution for the last 8 years. On August 28, 2023 I watched a video from Joey Troxel of Plant Based Dads and he described me - plant based but very little weight loss. From that day through today I have kept track of my calories using the Chronometer app. I follow the Starch Solution totally and I figured out my BMI which is really low. Based on that figure I allow myself 1300 to 1400 calories a day and I have a walking goal of 7500 steps a day. I turned 80 on this past November 3rd.

One step that really helps with collard wraps is dipping them in boiling water for like a second to soften them. I forgot to do that this time.

New to your channel. I can not eat any fruits except apple......due to allergies. I have a lot of allergies to spices also. Makes eating plant based really hard. No soy either.
Welcome. So glad you're here. You have your work cut out for you, considering your allergies. Apples are certainly a good thing to be able to eat AND there are so many different ways to prepare them. Do you prefer them cooked or raw? And what about spices? Which ones can you eat safely?

@ That is a long list. And a challenging one. I wish you the very best luck navigating that. I know that celiac opened my eyes to a world of possibilities. But it took awhile for me to stop feeling like I was missing out. Eventually I got to a place where I realized that there were still things that I could eat, as long as they didn’t include gluten. What is your best recommendation for others going through what you’re going through and how to survive?
Great video, Ellen. Thanks for your recipe and the details in your video. I’d like to see your granola and yogurt recipes too. I also eat oatmeal every day, with 1/2 cup of oats, 1 cup of soy milk, 1/2 serving of protein powder and some frozen blueberries. I’ve added riced cauliflower too, but haven’t been able to get it at Costco lately. Yours looks good with all of your additions!
Hey Colleen, welcome! The granola and yogurt recipes are forthcoming. I have an entire calendar planned for recipe sharing here on TH-cam. The good thing about frozen riced cauliflower is that it is available at most grocery stores. Worse comes to worse, you can always grate/rice it yourself by putting raw cauliflower through a food processor or blender, and then freezing it. I am a great believer in making do with what you have, my mother brought me up like that. I do my grocery shopping once a month. I am 76, live alone, and I use up whatever I have in the fridge, freezer, and pantry. I put ingredients together to make a tasty meal. I cook for three: for myself, fridge and freezer. That way, I always have enough food ready for me to heat and eat. I believe, people just do too much shopping, waste food and don’t know how to make good use of what they buy. They buy the items they still have. This is a life skill that make use of what you have and invent different ways to use up various foods.
You are speaking my language! I love the challenge of using everything in my fridge. It’s a fun creative way to cook!
@ my children think, I don’t keep food in the house, I need to eat ‘proper’ food! I eat healthy, fresh and nourishing food, though not always what one expects. I like it that way, as at times, I feel proud of myself to rustle tasty food from just 2-3 ingredients.
Can you be healthy on a WFPB diet if you cannot tolerate beans? Ive been struggling because of this issue, but still sticking with it. Im in my 70s now, but starting around menopause my cholesterol started to rise even on a WFPB diet. Cannot seem to get to 150 for total cholesterol, it hovers around 170s..LDL around 110. Before menopause my cholesterol was 120 and I was still eating animal products.. Getting old aint for sissies!😮 I really enjoy your videos and they inspire me!
Great tips i’m just curious im struggling with last 10 lbs so you do not count any calories at all ?
@@suzannemobley8814 I never count calories anymore, in fact I pretty much don’t count anything. Of course I am at maintenance now and that makes a difference, but even when I wasn’t on maintenance and trying to lose that last 10 pounds, I still wasn’t weighing and measuring and counting points. The freedom that I have found is remarkable!
@@suzannemobley8814 if you’re still struggling with that last 10 pounds, you might want to take a look at eating more vegetables and less nuts and seeds and tofu.

Hi thanks for you and so many other channels like yours I know try different ways to eat oats. I just had my oats with lentils. Yummy😋 I am not plant based but enjoy eating variety of foods especially different ways with veggies.
